Greek Pasta Bolognese- Simple and Delicious!

Bolognese sauce is traditionally a red sauce with beef. It is simple and common in the Italian cooking world and surely a comfort food for many people. This recipe takes traditional Bolognese sauce to a whole new level by adding just a few simple ingredients. If your trying this for the first time don’t be put off by the clam juice! It makes the sauce. This is great for entertaining and will leave your guests trying to put their finger on what made the sauce so delicious. If you like it with beef you can also try it with shrimp as the recipe that inspired this was originally paired with Shrimp.  I put this sauce over 100% whole wheat fettuccini or spinach pasta.

Greek Pasta Bolognese

A delicious twist on a classic sauce

Ingredients

  • 1/2 pound ground beef I only use 1/2 pound as the sauce is better saucier rather then meatier
  • 1 bunch scallions
  • 2 cloves garlic
  • 24 ounces strained tomatoes 24 ounces or 3 cups
  • 3/4 cup white wine
  • 3/4 cup clam juice
  • 1/2 tsp kosher salt
  • 6 ounces feta cheese

Instructions

  1. Peel garlic cloves and mince with knife.
  2. Remove white ends of scallions and discard. Slice into rings. Scallions will wilt when cooked so do not worry if rings are uneven in size. Alternatively, put all scallions in food processor and process into a paste.
  3. Combine beef, garlic, and scallions in large sauté pan and cook until beef is browned. Drain fat from pan.
  4. Pour tomatoes into pan all at once. These are the tomatoes I use as they are in a glass jar and I prefer glass over canned because canned tomatoes are found to contain BPA. Search for them in the organic section of your grocery store. If you cant find them in stores I know Amazon.com sells them in 6 packs.
  5. Add white wine and clam juice. Simmer to cook off alcohol. This is the clam juice I use, also is a glass jar.
  6. Crumble feta cheese into sauce and add salt. I recommend using a block of feta cheese as opposed to pre-crumbled feta as I have found the pre-crumbled contains added ingredients.
