Honey Cilantro Lime Shrimp

Have you ever been eating shrimp and thought… wow…. I just ate half of what I cooked?!?! This Honey Cilantro Lime Shrimp will quickly vanish into thin air just like shrimp always does! This is a super simple recipe with a nice balance of sweet, acidic, and salty flavors. It is great for parties, game days, or a nice dinner with the hubby and kids. The sauce is customizable so if you aren’t feeling the balance, add some additional acid/sweetness to make it your own. You really just can’t go wrong with a beautiful pile of shrimp and a few fresh ingredients for the sauce!

Welcome to the paragraph on this post about my life in the current moment. I don’t have a ton to write today, other then the fact that I’ve been pondering how Mom’s ever stop looking at all the pretty little things for baby girls!?!

WHEN. DOES. IT. END.

You guys, if you haven’t been following I have 4 boys. For 11 years I’ve walked by the baby girl section longing to buy it all. Like every single cute headband and bow and delicious little onsie with the cupcake and sprinkles all over it. For a really long time I completely shut out that side of the clothing store because I had come to the realization that I was a boy Mom and that meant green and brown striped onesies covered in dump trucks. I didn’t even want to peek at what may be on the other side of the store because I had nobody to purchase the cuteness for.

Until I did! 🙂

Don’t get me wrong, boys clothing has come a long way since my first was born. PRAISE JESUS. However, for me it still just doesn’t even compare to the bows and leopard print and leggings and dresses. It is, in the end, just clothing that will be shat upon and peed in and thrown up on. But the baby girl waiting game has been getting the best of my lately and my internet browsers are filled with all the cuteness that is out there and able to be purchased. Lord help my bank account and self control! Who has a favorite place to shop for little girl’s clothing?

Honey Cilantro Lime Shrimp Recipe Tips

  1. As mentioned above, if you need to balance out your sauce, go ahead and add more lime/honey to your liking.
  2. I LIGHTLY sprinkled the shrimp with adobo seasoning, and went even lighter with the cumin. These flavors really bring the dish together though, so don’t skip out on them! If you aren’t familiar with adobo seasoning, I use Goya brand and it has never failed me.
  3. If you don’t want to stand and peel two pounds a shrimp like I did, look for the pre-peeled shrimp! Generally I always buy frozen shrimp because… Hello… Mom of 4, soon to be 5 over here doesn’t have a million dollars to spend on seafood each week, so frozen it is! I was not able to find wild caught shrimp that was pre-peeled.
  4. The fresh cilantro kicks this recipe up about a million notches so don’t skip out on it unless you are the 10% who thinks that cilantro tastes like soap. 🙂
  5. I served this shrimp over rice with avocado slices on the side. It made for a fantastic dinner!

Grilled Surf & Turf Tacos

Tacos are a family favorite here, and these Grilled Surf & Turf Tacos did not disappoint! They are so quick to put together, and a perfect meal for any night of the week.


One quick thing to point out about life in general. Target now has organic flour tortillas and that means my life is basically complete. For years (I’m not kidding) I’ve been looking for a store bought flour tortilla that did not contain hydrogenated oils, also known as trans fats. I was able to find ONE product at Giant that did not. ONE. They are good, but I like options!

Now there are two! So I can now go to Target, get a latte from Starbucks, buy diapers, groceries, and  tortillas all in one place. Yeeessss. 🙂

Not only did I find flour tortillas that checked out in the ingredient department, I also found a huge bin of Avocados From Mexico right next to the tortilla section. In the bin I found the perfectly ripened avocado. Not too mushy, not too firm, but right in between. It sliced so perfectly for these Grilled Surf & Turf Tacos. The best part… I wasn’t even there for tortillas or avocados!! haha In fact, I don’t even know what I was there for!

Only. At. Target.

In my Fiesta Grilled Chicken recipe I shared a spice mix that I use for grilled meats for tacos, burritos, quesadillas, etc. This recipe is exactly like that one, in that I just use a few spices and I’m done! No packets for seasoning, or out of the ordinary ingredients. I love these simple recipes and my family does too!

Speaking of packets… a friend was just over at my house the other day and mentioned that she has always wanted to make her own taco seasoning mix but she just didn’t know what to use. I got mine off of the back of a can of beans one day. I have honestly not picked up a packet since then. It is so simple! You can totally play around with ratios of course,and add in other ingredients as you taste test and figure out what you like the best. Per pound of ground beef I use:

  • 2 Tablespoons chili powder
  • 2 Tablespoons cumin
  • 2 teaspoons adobo seasoning
  • salt and pepper to taste

The adobo seasoning does contain sodium, so I do go light on the salt. This recipe is similar, I’m just using steak instead of ground beef. Those 3 spices are the best together and are a great foundation for making your own taco seasoning. I’m sure I’ll be posting a ton of other recipes using them since my kids love this stuff and so do I!

There are a few recipes I’ve made so many times my wonderful husband just flat out hates now. Shouldn’t he just be happy that he has a wife that is cooking for him? I think so, I really really do!


*Side note: Mac n cheese is the other recipe he could do without me ever making again. Honestly I’m wondering what is wrong with that man. HA! I’m on a quest to produce the perfect mac n cheese, so he better suck it up and continue to taste test!

It occurred to me the other day that my family totally over-did this recipe at the beginning of the summer. We had just purchased a grill (holla at that cheapo $100 grill from Amazon!!) and we were grilling EVERY-SINGLE-DAY. Now, you have to realize, there is a very good reason for us to be over grilling. At our previous residence we couldn’t have a grill. It killed me a little bit inside every time we drove by someone’s house that smelled like sweet delicious summer time grilling. I hated the place we were living at a little more every time I had to smell that smell knowing that the grill master in me needed an outlet.  I had in my mind that when we finally got a grill we had somehow “made it.” Yes, it was like my Benz. Only it was a grill, and I needed it in my life.

Now that that really emotional and sentimental news has been broadcast all over the internet I think we shall move on.

One thing about grilling chicken that is a MUST for me is making sure your chicken isn’t too thick in any spots. I never grill chicken without pounding it first because there is nothing I hate more then when grilled chicken has a really fat side that takes forever and a day to cook through. If you have ever been at a restaurant and wondered why their grilled chicken that is seemingly so simple was 1,000 times better then your at home grilled chicken it is probably that their chicken was nice and even, with no super thick parts to take away from the yummy seasoning. My point: Flat chicken rocks!

The way I pound chicken (that may be obvious to some and totally new to others) is very simple:

  • Mise en place: Translation… Get everything out before you start because once you have raw chicken on your hands you don’t want to have to go back to get your stuff out!
  • Things you will need: Meat tenderizer aka keep my hubby in line hammer (totally just kidding don’t send me hate mail), cutting board, piece of plastic wrap or press n seal, chef knife, large bowl.
  • I always filet my chicken first by cutting it in half length wise. This isn’t rocket science and yes, sometimes I end up with a few pieces that are extra thin and that’s totally fine with me!
  • Place chicken on cutting board, put piece of plastic over chicken to ensure you don’t splatter everything you own with raw chicken bacteria.
  • Using the meat tenderizer lightly pound chicken as flat as desired. Don’t be shy, yet don’t go ape shit on it. Unless of course you are looking to get some aggression out. 🙂

Serving Suggestions

  • With flour tortillas (check those for trans fats! partially hydrogenated oil always seems to be lurking in these products) wrapped up with all the yummy toppings.
  • With grilled peppers and onions.
  • With a side of cilantro lime brown rice.
  • And of course with as much cheese on top as humanly possible. Oh and sour cream, because you can’t have one without the other!

Slow Cooker Turkey Sweet Potato Chili

*This Slow Cooker Turkey Sweet Potato Chili is a fall favorite that is packed with nutrition and so delicious! With fall right around the corner you need this in your life! Throw all the ingredients in the slow cooker, and have a fantastic dinner waiting for you at the end of the day. P.S. It’s also a great way to hide extra nutrition in chili for kids who are skeptical of sweet potatoes!

I’m just going to come right out and say this….. I put sweet potatoes in chili way before it was cool on Pinterest. Like, years ago! I didn’t do it on purpose the first time, it went down like this:


I bought the expensive pre-cubed butternut squash at the grocery store and I never used it. My husband nagged me about it until one day I was like FINE I’LL PUT IT IN THE CHILI now shut up about me buying random stuff at the grocery store and let’s move on (the man has a point here though I must admit).  So I threw the squash in my regular chili recipe and it was fantastic! How exciting it was when he arrived home after work and I had a new creation to share that made me look like a culinary genius. 🙂 Sweet and spicy for the win!

After the squash I gave sweet potatoes a go because we always have them on hand for making the kids sweet potato fries. I actually loved sweet potatoes even more, and the rest was history! That is until the Pinterest Pinnies were all like:

“Sweet potatoes in everything, all day everyday!”

“Sweet potatoes on fleek!” (still have no idea what that one means)

“Sweet potatoes all up in my chili!”

“Put sweet potatoes in your chili because it is cool now!”

You get the point. Everyone else figured out it was a rockin’ combo and then all of a sudden I was just a  regular person again.  *sigh*

Slow Cooker Turkey Sweet Potato Chili

Back before my culinary genius bubble burst I was actually using a stovetop chili recipe, however for my birthday last year my I received a brand new slow cooker from my mom! If you have followed other slow cooker recipes here, you might remember I had an ancient slow cooker that my mom was gifted for her bridal shower in the 80’s. No clue who bought that for her or why they thought she would ever use it (girl doesn’t cook) but it got me through a few babies and my first apartment. Shout out to the random relative who made that purchase and RIP awful baby poop colored slow cooker! With my shiny new slow cooker I realized how much tastier chili was in the slow cooker vs. on the stove top and I don’t think I will be looking back anytime soon! Shiny new slow cooker for another win!

Recipe Tips

  • I cut my sweet potatoes in small cubes (pictured below), however when the chili was done they were pretty well cooked. So much so that they disappeared into the chili a bit. I found this really awesome, however if you are looking for a chunkier finish I would cut them a tad bigger then what is pictured below.
  • I added 2 jalapeños and it was bit spicy for us. The spiciness was muted in the leftovers though and that is when it was just right! If you are not into spiciness at all, of course just omit the jalapeño all together.
  • As mentioned above, this chili gets better and better everyday in leftovers! It is a great meal to make at the beginning of the week to have a healthy lunch for the next few days.
  • I tend to keep chili simple because a speech professor once told me the acronym K.I.S.S. or keep it simple stupid! This sticks to me with chili because when folks are looking for good chili recipes they don’t want to have to go to the grocery store and buy ingredients that they will use 1 tablespoon of and never see again because it is so far back in the pantry.
  • I have found (thanks to the back of a Goya bean can) that 2 Tablespoons of cumin, 2 Tablespoons of chili powder, and 2 teaspoons of adobo seasoning are the PERFECT spice combo for chili. This is my go-to amount of spices and it has never failed me. You can certainly play around with it but that combo will give you just enough flavor without being overpowering.

Slow Cooker Pork Tacos

Crock Pot Pork Tacos

Cinco de Mayo is just around the corner and these slow cooker pork tacos are the EASIEST Cinco meal ever! Ok, ok, maybe guacamole is easier but who is really keeping tabs?


Let’s dive right into talking about the recipe, shall we? For being a slow cooker meal I kind of have a lot to say about it!

First, I’ve brought this taco meat to a few gatherings and people have always enjoyed it. This is a great meal for transporting and I’ve even served it with tortilla chips just to keep things simple. I love being able to transport meals that I know won’t somehow end up all over my car or something terrible like that (think soups!). Crockpot = Safe transporting! Plus once I arrive I know I will have a way to keep things toasty until serving.

Second, I love putting a bunch of fresh toppings on tacos like these to boost the nutritional value and make them even yummier! For these tacos I used fresh cilantro, tomato, and avocado. I also added shredded Colby jack cheese and sour cream. So basically I stuffed the heck out of the shell and called it a day. 🙂

And last but not least this taco meat is soooo a “second day meal.” You know, something that sits in the refrigerator overnight and magically tastes even better then it did the day before? Yeah, totally these tacos. If you decide to make this for an event, or  just for your family, I would highly suggest allowing the meat to soak up all the saucy goodness overnight. I’m not saying it isn’t good straight up the first day but so much more flavor develops overnight. With the ease of the recipe I find it super convenient to make the day before so the next day I can think “Dinner is already done. Yess! No dishes, no cleanup.” Love those days!

Well hello there delicious, easy taco dinner just waiting to be gobbled up by my boys!


This taco recipe is definitely one of those “I just don’t feel like making dinner tonight” recipes because it comes together in literally just a few minutes and your family will love it! Even better, it doesn’t contain any random ingredients like the ones you will find in those pesky little taco seasoning packets.

When I started reading ingredient lists I realized quickly that those packets contain more additives then they do actual spices. Weird, I know. But if I know all the big name companies like I do, it doesn’t surprise me one bit! They never fail to add a bunch of crap to something seemingly super simple. Not to mention those packets-o-random-ingredients are more expensive then just buying real spices.

When I ditched those packets I realized something about seasoning tacos without them, and that was the texture was a little different and sometimes my meat ended up a tad dry. Don’t get me wrong, we still slapped a bunch of cheese and sour cream on those babes and the problem was solved, but one day I decided to experiment to try to achieve that “extra sauce” that I felt the meat needed.

Welcome…..strained tomatoes and cheddar cheese! Viola! 🙂 My trusty strained tomatoes solved my problem + added additional flavor to my meat. Yes and yes!

One last tidbit… I did add fresh cilantro because I had some on hand. If you don’t have fresh cilantro I would go ahead and just omit it all together. Your tacos will be just as delicious even without the cilantro!

Creamy Crockpot Taco Dip

Today my hideous crockpot is unveiled. I’ve spoke of it, I’ve joked of it, and here it is in all of it’s *older then I am* glory! Doesn’t the color  remind you of something your mother got as a wedding shower present? HA! 🙂

Before we get started I’d like to point out the obvious: tomorrow is New Year’s Eve! My whole family is going to a party at our Pastor’s house so that should be fun. I know, I know, it sounds like a big snooze fest but it is not like that at all, I’m telling you! 2014 has been such an amazing year for me. I watched my boys grow up a little more *tear*, started this blog, and was surrounded by amazing people all year long. I couldn’t have asked for anything better. It is amazing how every year seems to get better and better. Ok, I’m done with the sentimental stuff now, I promise! On to the dip….

Even though my crockpot is ugly it doesn’t stop this dip from being delicious, addicting, and pretty. Now don’t get me wrong, I’m not claiming this dip to  be healthy or fat free….but it is one notch above the Velveeta and Rotel kind of thing because Hello! no random ingredients! So that makes it a little better, right? PLUS it has fresh tomatoes on top and that’s a veggie (I mean fruit, but hey who is being politically correct right now?) so…yeah…tomatoes = healthy. I mean, it was a nice try, right?

Cooking Tips

  • I only made a half batch of this dip because I was only serving it to my family. The recipe below is a full batch, that will serve roughly 12 or so people.
  • I waited until the end to add my beans, however you can throw them in with the rest of the ingredients in the beginning if you’d like.
  • If you want your dip to look like mine, use a plastic baggie to pipe your sour cream in lines! 🙂
  • I recommend choosing a tortilla chip that doesn’t contain soybean oil, and is non-GMO verified. We love the brand Garden of Eatin’ so check them out! I’ve also found Wegman’s has a decent organic corn chip if you live around one of their stores.
  • When all of your ingredients are melted together just perfectly, turn your crockpot on warm/low to keep it warm for your party.

Creamy White Cheddar Baked Corn

Corn. The glue that holds all Holiday meals together. Don’t think so? Try omitting it sometime, and everyone will just keep wondering “What’s missing here???”


I have to admit, I’ve been a corn lover my whole life. As a child I absolutely despised veggies, but corn…we got along just fine. So obviously, as an adult and a chef, I look for ways to make corn even better then it already is. I’ve found a winner here….ding, ding, ding! 🙂 Corn + cheese = yes! It doesn’t really take a genius to figure that one out though, so let’s just say I took an obvious combination and upped the ante a bit by adding a touch of white wine and a layer of crispy Fontina cheese on top!

And now… I bring to you…more processed food confessions from my childhood. Boy, I hope my parents decided my blog was too  much of a snooze-fest to even read anymore because I’ve been calling them out for all the crap they fed me as a child a lot lately! I’m just going to assume they aren’t reading and proceed to call them out yet again! The cheese whiz, the frozen pretzels, and now the Kid Cuisines (among lots of other crap). I mean, seriously…why? And who? Who goes to the grocery store and thinks processed junk food in plastic containers that you cook in a microwave seem like a good idea? Apparently my parents thought it was quite nifty because let’s just say I ate Kid Cuisines a few times a week for a few years. I’m still alive! But no wonder I was fat and awkward!

In their defense, I really loved those things. I came home from school, watched Nickelodeon, ate my TV-dinner. The life of a 90’s kid! My favorite Kid Cuisine was the tacos (ok, is talking about this crap getting creepy yet?!?!?). I refused to believe the tacos had beans in them (THEY DID) because I thought I hated beans. I also was quite the little chef because I always mixed the corn and cheese sauce and it was the best combo ever. Hence…. this recipe!

One really important step in this recipe is making sure your frozen corn is defrosted! If it isn’t defrosted it will make the sauce runny when it defrosts in the oven. I made the same mistake one time but quickly fixed it by adding a few tablespoons of flour and baking it for a few more minutes. Flour fixes everything!

*I recommend looking for frozen corn that is organic/non-GMO verified! I used sweet corn that I froze this summer, but store bought is perfectly fine as well!

One Pot Chilli Mac

I know, I know, where have I been? Well, you see there’s this thing called *my oven is like a million years old* and I burnt the skin of a chicken that was supposed to be another post last week. Then there was also this thing called *the lighting in my photo-taking room sucked* and the beautiful reindeer cupcakes I made were basically poo-poo in pictures. And Rudolf even had a shiny nose! 🙁

Speaking of my old oven… that thing! I could seriously just take it outside and have a grand ol’ time with it + a baseball bat. You know your oven is THE WORST when you actually have to Google how to move the racks. I wish I was kidding, but no. I Googled how to move the racks in my oven. *Face Palm* Apparently in the 70’s (I’m guessing) somebody who probably never used an oven decided the best way to move a rack would be to lift it from the very back of the oven. Yeah, totally would of never considered trying that. Just another joyful aspect of apartment living!

But then today… This Chilli Mac happened. And my lighting was nice. And I wasn’t Googling how to use my ancient oven. And there was copious amounts of cheese and greens to throw around to make everyone pretty. I mean really, does it get any better? Comfort food + Happy blogger and boys = Yay!!!!

There is one thing in this recipe that I haven’t talked about lately on 3Boys and that is ketchup. I highly recommend seeking a brand that doesn’t use high fructose corn syrup in their product. Not only is it GMO, it isn’t good for us and the brands using it in their products basically just suck. BOO to them! Don’t buy their crap! Ok, I’m done. 🙂

Now that I got that vent off my chest let’s dive head first into a big bowl of Chilli Mac, shall we? This recipe combines the goodness of hamburger, whole wheat elbow macaroni, sharp cheddar cheese, tons of spices, ketchup, mustard and sour cream into a big, delicious hot mess. This hot mess will make you want to burn the roof of your mouth right off because you can’t wait just 1 minute for it to cool down. I know, I do it every time too. Basically take everything you have in your pantry, dump it into one big hot mess, and enjoy! Chilli Mac it is!

#52newfoods Challenge: Sweet Fire Chilli

One of the most common questions I get regarding healthier eating habits is “Do your kids really eat that stuff?”

In short, the answer is yes! They do. However, they are all their own little selves, so  there are some exceptions to that statement. After all, my kids aren’t heath-food robots and neither am I. We are a real family, trying to live a healthier lifestyle by cutting processed foods and cooking from scratch. Believe me, some days go better then others, but what I know at the end of the day is everything my kids eat in our home is home cooked, real food. Nothing comes from a package, they don’t eat boxed cereals and pop-tarts for breakfast, and I cook nearly every single meal from scratch. I also have the job of being a mom, in my home, where my food goals are easily attainable. Not to mention, I am already a trained pastry chef and cook, so cooking form scratch was never an issue for me. However, I would be foolish if I thought this was everyone’s life, and I know busy families will quickly fail if the only advice they are given is “cook from scratch.”


Removing processed foods from my household didn’t happen over-night. I was desperate to loose my baby weight, and I knew the key to doing that was getting rid of packaged stuff and replacing it with fresh stuff. Little by little my husband and I made smarter choices, came home from the grocery store with more produce, and started incorporating new foods into our family dinners. When my husband was grocery shopping alone I would ask him to bring home one mystery item for me to create a new recipe with, and to encourage all of us to try something new.

When I started sharing pictures on Facebook of what I was feeding my toddler for lunch, people were instantly interested.

” How do you get your kids to eat that stuff and how can I learn to do the same thing?” came from just about everyone I knew.

Unfortunately I don’t really have any fun or interesting answers! I changed the way we ate little by little, and began cooking everything from scratch instead of using convenience items. The more and more I read ingredient labels, the more I understood just how much food companies take a simple item and turn it into something horrible and unhealthy. I also realized relying on marketing wasn’t going to cut it. I began realizing the more items I purchased THAT DIDN’T EVEN HAVE PACKAGES, the easier making healthy choices became.

Since starting the blog I’ve been on the look-out for helpful ideas for parents trying to solve the never ending mystery that is getting their kids to try new foods. I know every family has their own story, way of life, and eating habits so I was really looking for something that was relatable to all families. When I came across Jennifer Tyler Lee’s new book: The 52 New Foods Challenge, I knew this book was exactly what I was searching for!

The Book

Have you ever considered forgetting about pushing “healthy” foods and just asking your kids to play a game with you? How about pitting your oldest against your youngest to see who can eat the most colors and score the most points? What if broccoli and kale scored higher so they were now the most sought after foods at the dinner table?

I know, I know, it sounds crazy but when I was reading The 52 New Foods Challenge, I started thinking “Why didn’t I think of this before?” My boys absolutely LOVE to out-do each other and dinner time is no exception.

What about considering taking just one hour a week and putting it toward trying something new? No need to completely over-haul your life, just one baby step at a time, and you will be reaching your food goals in no time! Can you imagine next year at this time if your kids were familiar with 52 new fruits and veggies that you could now incorporate into your family dinners?

The 52 New Foods Challenge lays all of this out in a fun and exciting new way to deal with food. No more stressful evenings fighting with your children about why they won’t eat their veggies! Not only does Jennifer explain the game, the point system, and the foods, she also talks about how she plans her meals and packs lunches. Last but not least, Jennifer suggests NO SNEAKING! This was one of my favorite things in the book because I feel the same way. Foods don’t count if your kids can’t see them, and feel their texture.

The Recipe

One amazing thing about The 52 New Foods Challenge is that the foods are listed in season. We try to eat in season as much as we can because I can get a ton of produce at local markets, and it is cheaper! I also prefer food that comes from my area, and eating in season makes this goal really attainable.

Sweet potatoes have long been a staple in our household. When my son was a baby I started feeding him sweet potatoes and he’s been loving them ever since. When he was small I would steam them really soft, and when he got a older I made fries with them. I still make my kids sweet potato fries a few times a week because I know for sure they will always, always eat them! Most of the time they are gone before I even get a chance to grab one!

When sweet potatoes became a staple in our home they started finding their way into our family dinners, and when I put them in chilli I knew I had a winner on my hands. It was absolutely the best chilli I had ever made, and I have been making chilli with sweet potatoes ever since! When I was thinking of a fall recipe to share, I knew this Sweet-Fire Chilli had to be the one. I take fire roasted tomatoes, sweet potatoes, and great northern beans to make a colorful, delicious dinner that your whole family will love. My kids love the color, I love the nutrition, and everyone loves the cheese and sour cream we get to put on top. 🙂 How many colors can you count in the bowl?

Jennifer also suggests getting kids involved with food preparation, so I let the kiddos cut up their dessert, a fruit salad. The used baby oranges, strawberries, and pomegranate seeds to mix together to make themselves a snack after school. They had fun eating their fruit as they were cutting, and even helped me with some of the tomatoes for the chilli. It actually went a lot smoother then I thought it would because typically I don’t let them help.

Healthy Loaded Nacho Skillet

It is officially Football season and the first day of Fall! Yay* for pumpkin everything and tailgating. A bigger *yay* for pumpkin spiced lattes from my good ol’ Nespresso and cold brewed coffee with my very own Pumpkin Spiced Coffee Syrup. Ok, ok we are getting all coffee snob up in herrr so let’s move on to nachos because who doesn’t love some gooey melted cheese, spicy black beans, corn chips, sweet corn off the cob, rice, veggies, and even more gooey melted cheese. And not the fake stuff folks because we don’t get down with Velveeta like that!


That’s right.. nachos do not have to contain Velveeta because cheese is WAY TOO GOOD on it’s own to add a bunch of crap that makes it look like plastic when in cools. You pickin’ up what I’m puttin’ down? Thank You, Thank You, I knew you would understand!

Now let’s forget about that crap and get back to the good stuff because these nachos are the perfect balance of all the cheesy goodness you would expect from nachos, and a bunch of other goodies that are whole and nutritious. Sweet bell peppers, a big bed of lettuce, brown rice, black beans, oh yeah! Loaded nachos say whhhhhaaatttt?

Ok, ok I’m calming myself down but this is something to get excited about. One of my all time favorite snack foods, in a skillet, with nutrition on top?

Now that my rambling nacho madness is over the voice of reason is here to tell you what exactly this Loaded Nacho Skillet is PLUS the fact that it only takes 30 short minutes to put this bad boy together. Cook the rice, add the beans, the cheese, the frozen corn, the chips, more cheese, the peppers, more cheese, and finally broil it for a few minutes until everyone is happy. Got it? Since that way A LOT of steps here is a pretty picture for you to see exactly how to achieve this nacho goodness:

Now if you really want to take these nachos totally over the top try adding a dollop of my Homemade Ranch right in the middle of a big pile of nacho goodness. These two things are basically a match made in food heaven and I would not tell you to do another step if I didn’t think this ranch was basically the best thing that ever happened to these nachos. Nachos meet ranch. Ranch meet nachos. And they lived happily ever after all up in my tummy!

Pork Carnita Bowl

Let’s just get real here…. these Pork Carnita Bowls are ridiculous. Ridiculously good that is! So ridiculously good that my husband took one bite and said “This is way better than Chipotle.” EXACTLY what I was thinking all day when I was eating it. Yes, I was chowing down on the meat all day because I decided it would be a good idea to make it ahead of time. That turned out to be a horrible idea!


Why is it a horrible idea you ask? Because you will want to eat half of it before the rest of your family even knows it is in existence. You might even think up some evil plot to hide it from everyone and pretend it never happened just so you can have it all to yourself. I’m not saying any evil plots went on inside my kitchen today, but I definitely ate a good third of the meat before anyone else even had the chance to taste it. When my toddler caught wind of what was going on he was trying to smuggle handfuls of meat into the living room without being noticed. Not gonna happen on my watch, bebe, because I know all about them smuggling tricks. I’m the master smuggler with my expensive organic chocolate bars that I’m so NOT sharing with any kiddos. I know all about hiding in a corner or closet and quickly enjoying every delicious bite before someone notices. At which point I pretend like I have no idea what chocolate they are speaking of. Chocolate? Where? 😉

Just incase anyone was wondering what exactly a carnita bowl is, here is my super awesome step-by-step picture thingy for your viewing pleasure. It is basically just like a bowl that you would get a chipotle, minus the random ingredients they use. Speaking of random ingredients I now present you with my Chipotle public service announcement. If you don’t care please pretend like I’m saying this really quickly just like the person at the end of the pill commercial who tells you your probably going to just drop dead as soon as you take it. Here goes:

Chipotle is not healthy fast food.  Their wraps contain partially hydrogenated oils (aka trans fats) and a bunch of other crap. They use genetically engineered soybean oil in all of their products. Just because they have cool bags and make claims like “grass fed” and “better” doesn’t mean they aren’t sneaking crap into your food. The End. Now please, look at my cool picture thingy! And while your at it Pin the picture thingy so other people can see how awesome it is.

Wow, that was awesome sauce, wasn’t it? 🙂 Now, let’s talk more about making the meat because I have a serious confession.  You may have noticed, I don’t really do slow cooker meals. I know, I know, the new moms need slow cooker meals! But I’m over that phase right now (phew!) and slow cookers are just too boring for me. I need to be able to see the food and play with it while it is cooking because I’m just ADHD like that. I can’t bear the thought of putting my beautiful pork roast in a lonely, not to mention ugly (my mom got it for a wedding gift like 100 years ago and it is that baby poop green color. Anyone from that time want to explain that color to me?) slow cooker and leaving it all by it’s lonesome for a few hours. I mean, come on people, pork roasts need some lovin’ too and my ugly slow cooker isn’t doing the job. I just can’t. This is my officially official apology to all the slow cooker lovers. I’m sorry!

*This recipe would work wonderfully in a slow cooker though, so if your not as ADHD about food as me, give it a try!

So what did I do if I didn’t use a slow cooker? I simply used my stovetop on low heat for about 90 minutes. Yes, 90 minutes to all of this awesomeness. That potentially means you could throw this on the stove when you get home from work along with the rice, go do a bunch of crap that you didn’t really want to do, and come back to some wonderful carnitas. If you are more of a nacho, taco, or burrito person this meat would be amazing served in any of those ways as well.

Carnita Bowl Seasoned Rice

Ingredients:

  • 2 cups rice
  • 1/4 tsp kosher salt
  • generous sprinkle adobo seasoning
  • 1 sweet bell pepper (red, orange, or yellow preferred)
  • 1/4 cup fresh cilantro

Directions: Put rice, seasoning, pepper, and water needed to cook rice into a pot and cook according to package directions. When rice is cooked, fluff with a fork and add chopped cilantro.

Overstuffed Sweet Corn and Jalapeno Peppers

Embarrassing food geek confession: I was super excited when I saw purple and black bell peppers at a local farmer’s market and endless recipe ideas flooded my head as soon as I saw these beauties. The best part… I filled two grocery bags full of beautiful produce, handed it to the gentleman running the stand, and he said $6 please. $6!!!!! For two heaping bags of produce. Helllllooo Gratz Auction, Thank You for being so awesome (and no I did not get a fish sandwich or pretzel to anyone who knows what I’m talking about). 😉 Another amazing find at the market… Non-GMO sweet corn! I got a dozen ears for $4, and left a happy, happy girl because my hopes of finding sweet corn that I trusted to be Non-GMO this summer were slim. Somehow I missed the yellow watermelons but hey, this girl can’t have everything. Maybe next time!

My husband kept asking why I wasn’t standing the peppers up because according to him “they look better that way.” Ummm… last time I checked you aren’t a food stylist hubby, so maybe you should keep your food styling tips to yourself! 😉 However, I explained the method to my madness and he totally got it. Stuffed peppers are delicious until you hit the bottom and you realize… you are out of stuffing. Now what? Do you eat the soggy bottom? Do you push past the guilt of wasting food and toss it? Problem solved right here folks, lay your peppers down and stuff the heck out of them. Stuff them babies till they are stuffed-out, heaping brown rice and goodies, and there is no way possible you or any army of men will ever run out of stuffing. Ever!

Sweet corn and jalapenos were truly meant to be friends. They go together so well, especially when mixed with rice and beans. I really wanted to keep these peppers simple so I mixed in other ingredients I felt most people would already have stocked in their pantry. I used black eyed peas, but black beans would also work great in this recipe. I also used homemade chicken stock I had already prepared and froze (speaking of stock I need to go strain my pot on the stove now!) however you could look for a low sodium, boxed stock that doesn’t contain any artificial ingredients or MSG (also look for other forms of MSG such as yeast extract and autolyzed yeast). If you use a boxed stock, you might have to adjust the adobo according to the salt content of the stock.

Tex-Mex Potato Wedges

I’m just going to throw this out there…. these Tex-Mex Potato Wedges are epic. So epic I’ve included a ridiculous amount of food porn! They are over the top delicious and possibly one of my all time favorite food creations. These potatoes do take a little bit more time to put together then your average baked potato wedge recipe but they are soooooo worth it in the end!


Here are the steps to making these amazingly cheesy and delicious wedges:

I’ve said this before and I will say it again… the key to the perfect oven baked potato wedges is boiling your potatoes before you bake them. This ensures you are going to get a really nice fluffy inside with a super crispy outside. Essentially that is what the perfect wedge is to me! The other important part of this recipe is seasoning the potatoes correctly. I’ve included the spices that I used, which are pretty standard tex-mex spices.

My secret weapon when it comes to the perfect looking potato wedges is paprika. You want color on your potatoes and paprika is going to do that for you.  Although this recipe already has chili powder in it, I still sprinkled extra paprika on the potatoes just to bump up the food porn appeal! One last thing to note about the spices… measure your cumin people! Too much cumin will ruin these potatoes so I wouldn’t recommend going over 1/4 tsp.

As for the toppings, the sky is the limit! I topped mine with sour cream (which I consider essential), avocado, and fresh tomatoes. Of course we needed to throw in some fresh produce to combat all of the cheese!

White Bean Tacos (With Avacado Cilantro-Lime Sauce)

I love mixing things up with meatless Monday meals! We were on our way home from a trip with the in-laws for Memorial Day weekend and we spent a good part of the day traveling. I can’t even explain how tired I was when we arrived home. The latte I had on the way home just wasn’t cutting it! Needless to say we arrived home with nothing to eat and take-out was calling my name. The problem with take-out though is NOTHING fits our lifestyle. We have not found any places in our area that don’t serve refined food bombs, so take-out for us is almost non-existent. We do bend the rules once in a while but  I’m always left feeling really drained after eating highly refined foods. My body quickly reminds me how much it doesn’t like bad food choices, and I always experience pretty bad “crashes”. This is reason enough for me to stick with the good stuff because with 3 kids I need energy, and I was already drained from traveling.


I pinned the Avocado Cilantro-Lime Sauce from The Garden Grazer on the way home from our trip, which she paired with another bean taco recipe (thanks for the inspiration!). I switched a few things up with the bean filling and it was amazing. My kids didn’t even question the fact that the tacos weren’t beef and after I ate 2 tacos the only words I could utter were “I really needed that.” The best part was, it took about 5 minutes to make the filling and another 5 for the sauce. 10 minutes to an amazing and healthy meal is where it is at!

I should also mention that we are really choosey when it comes to taco shells. We purchase certified Non-GMO shells from Garden of Eatin because they are Non-GMO and do not contain soybean oil. They are a dollar or two more then the big name brands but the extra money is worth it when you are getting a quality product from a good company. We also love their blue corn tortilla chips!

*Here is a link to the strained tomatoes I use, that are jarred instead of canned. This product is about as good as fresh as it gets, and contains no added salt! LOVE IT!

Spicy Black Eyed Pea Burgers (Morningstar Alternative)

Buying good food to feed a family of 5 can be expensive! One thing we try to do to save money, try new things, and be healthier overall is take the focus off of meat in our meals. There are so many unknowns about the meat industry in America, and quite frankly I just don’t trust any of the big name brands. We do buy organic meats, but they are super expensive! I do use a few tricks to stretch the meat we buy, but I also love throwing in one or two meatless meals every week. I like experimenting with new ingredients and creating new recipes that do not contain meat and so far my family has really loved all of veggie friendly meals I’ve served. My kids do love beans and I’ve been serving lentils to my toddler since before he could even talk. Both of these are awesome alternatives to meat and contain tons of protein and fiber.

Roasted Poblano and Cheddar Mac

My husband brought home a poblano pepper that I didn’t use in chili, so I challenged myself to coming up with a new recipe to use the pepper in. My kids request mac n cheese every time I ask them what they want for dinner, so I combined the two and it turned out to be a great twist on mac n cheese. It was really delicious with just a hint of spice. This side could easily be turned into a main dish by adding some extra veggies and seasoned black beans. If you are tired of the same old mac n cheese, I would highly recommend trying this recipe!

Sweet and Spicy Chili

If you have seen any of my other posts you may have noticed I do serve sweet potatoes often! My kids love to eat them as fries, and I like to put them into many dishes. The hint of sweetness they provide compliment many other ingredients. I started putting sweet potatoes in my chili after my husband bought a butternut squash that I needed to use before it went bad. It worked so well I moved right on to sweet potatoes and now I rarely make chili without them. This is a staple recipe in my kitchen and I hope you enjoy it as much as we do!

I also serve this with whole wheat cornbread, and you can find that recipe here. I followed this recipe but instead of using cream I used milk and it came out perfect.

Also, here is a link to the tomato product I use. We do stay away from canned tomatoes because of the possibility of chemical leaching into the product.

Stuffed Pepper Skillet

peppers6 Making an entire meal in one pan has one huge benefit…. less dishes! Any dinner with easy clean up is on the top of my “to make” list and this Stuffed Pepper Skillet did not disappoint. My father-in-law picked up some beautiful peppers for us at the Gratz auction and when I was thinking about what to make for dinner stuffed peppers seemed like the obvious choice. The last time I made stuffed peppers I noticed that both my husband and I didn’t finish our entire pepper because there is too much bulk at the bottom with no stuffing. I hate to see food go to waste so I decided this time around I’d go the skillet meal route.  I can confidently say we will be sticking to the skillet version because it was so much more delicious! In this recipe I do use a strained tomato product in a glass jar. I am very untrusting of canned foods with the whole leaching aspect,  so when I found these tomatoes at the grocery store I was happy to have an alternative to canned. They also do not contain any added salt which I appreciate because then I can control the sodium content of my meals. Here is a link to the tomatoes. I also bake off two bone in chicken breasts at the beginning of each week to use in meals and in place of lunchmeat for my 1st grader’s lunch. For this reason I did not include cooking the chicken in the directions, however I simply season them with salt, pepper, and olive oil and bake at 350 degrees for about an hour. When they cool I pull the meat from the bones and store in the refrigerator until I need the chicken. It is so simple and saves me time throughout the week. If you want to use boneless chicken breasts, you can cut them into small chunks and sauté with the diced peppers and garlic. Alternatively, a half pound of ground beef or a can of black beans would be great in this recipe as well. stuffed pepper skillet
