Traditional Meatballs

I admit, I have had my fair share of meatball recipe fails. From being dry and tasteless to having a weird texture, meatballs can be hard to master. These Traditional Meatballs bring the flavor and tender texture without the hassle.


This Traditional Meatball recipe is SIMPLE. It is minimal. It does not require mincing onions and garlic and buying several different cuts of meat. It is kid friendly, picky eater friendly, and yields a delicious, tender meatball that will swim perfectly in your favorite sauce. I know, I know, there are a million other meatball recipes out there, but just take my word for it, this one is good!

How to Make the Perfect Meatball

  • Skip lean cuts of meat. I always use 80/20 when making meatballs. I have tried 90/10 and from my experience this is exactly how to get a dry meatball.
  • Soak the breadcrumbs. You will want to give your breadcrumbs a brief soak in the milk and eggs before you add them to the meat. This also ensures your meatballs won’t be dry.
  • Do not over mix. I get my hands in there and mix everything quickly instead of using a spoon or fork. You’ll have to get your hands dirty to get all of your ingredients distributed properly, and that’s ok! Give your mix a few good squishes and you should be good to go.
  • Season your meatballs properly. The WORST meatballs are bland and tasteless. No amount of sauce or salt afterward will make your meatballs taste better, so you must season as you go. I use a mix of coarse kosher salt, parmesan cheese, Italian breadcrumbs, and a small amount of soy sauce to ensure my meatballs are properly seasoned and taste anything but bland.
  • Do not bake the life out of them. I prefer to start my meatballs in the oven at 400 degrees. This will give you that beautiful, brown outside crust that we are looking for. However, overtaking can also yield a dry result. I have found about 20 minutes is plenty of time in the oven, then I put them right in the sauce for simmering.

Traditional Meatballs

To finish off my meatballs, I paired them with pappardelle pasta. For the sauce (because I have extremely picky children) I used Simply Ragu Traditional. If you have children who like a very smooth sauce, Simply Ragu Traditional is your best friend. I added a little bit of sugar and salt to the sauce and gave my meatballs a quick simmer and viola!

Honey Barbecue Bacon Meatballs

The Super Bowl is right around the corner, and these Honey Barbecue Bacon Meatballs are a crowd-pleasing appetizer worthy of bringing to the big game!


Truth: I don’t care about the Super Bowl. I don’t follow football, my husband doesn’t follow football, and well… we just aren’t a sporty family. I GUESS I’m rooting for the Eagles because my Mom is a super fan and I’m close to Philadelphia. 🙂 We usually go to a family friendly party, and I’m strictly there for the food so don’t ask me about the game or even the commercials because I could care less!

My ALL TIME favorite Super Bowl appetizer is Buffalo Chicken Dip. It is addicting, delicious, and expected to be at every party. Wings are also right up there on the list of must haves, but you will always need a few other items to fill in for the folks who aren’t into spicy foods. Shrimp, meatballs, guacamole, pizza… you know all the good stuff!

For these Honey Barbecue Bacon Meatballs, I did make my meatballs from scratch because it is super simple to do! HOWEVER…. if you happen to pick up frozen meatballs to make this recipe, no judgement here! That is what I love about this recipe, it is customizable and can be made in even less time if you are in a hurry. Getting all of my family ready and out the door for a Super Bowl party is stressful enough, so I totally get it. If you are running low on time or just don’t care…. GET THE FROZEN MEATBALLS. 🙂

Honey Barbecue Bacon Meatballs Recipe Tips

  1. Again, this recipe is totally customizable. Don’t have time to make meatballs from scratch? Buy frozen! Want your sauce a bit sweeter? Add more honey! Really love ranch dressing? Drizzle some on there like I did!
  2. If you are making meatballs from scratch, the meatball recipe is a basic tried and true recipe. There isn’t anything particularly different about it, because the sauce and the bacon are really making these meatballs.
  3. The sauce is WAY better the next day. I would suggest maybe making it the day before, and letting all of the flavors come together overnight in the refrigerator. Here is the thing about homemade sauces like this…. they need time. Just like the sauce you buy in the grocery store has been sitting for a period of time, it is also good to let your homemade sauce sit and mingle together.
  4. If you’d like to make these as a meal, they are great with a simple side like buttered egg noodles or jasmine rice. We have eaten them as a meal with rice and they were fantastic.
  5. If your party is large, I would suggest making a double batch. If you’d like to stick with a single batch, you can always make them mini-meatballs to stretch them farther.
  6. For the meat… I prefer to use a meatball/meatloaf mix of meats. It includes beef, pork, and veal. I know, I know. But listen, the meat matters! My local grocery stores do sell this already pre-mixed specifically for meatballs and meatloaf. If you can’t find a meatball mix at your grocery store, I would ask the butcher there to make you a mix, or just purchase 1 pound of each and make a large batch and freeze the extras.

Apricot Chicken Recipe


This may not seem very interesting to most people, but something really epic happened to me today. I FINALLY found maternity jeans that I don’t hate. AND… I got new shoes. 3 pairs! AND… a new bra. AND… a few other nice shirts to get me through the rest of my pregnancy. Life is good. I look like a normal human being again. It feels good!

If anyone ever tells you a new pair of jeans that fit right isn’t life changing, please have them reference this. IT IS. This baby bump and Mama are so happy!

When I arrived home from my epic shopping adventure, food was necessary. Walking around the mall is exhausting when it feels like there is a bowling ball, that may or may not pop out at any time, between your legs. So I put together this Sticky Sesame Apricot Chicken and sat down!

Apricot Chicken Recipe

What I really love about this Sticky Sesame Apricot Chicken recipe is it combines so many flavors. The apricot preserves I used are a bit tart. Mix that with the sweetness of brown sugar, and the saltiness of soy sauce….and you have the perfect combination! I’ve mentioned my Jasmine Rice cravings, and this recipe did not  disappoint! It goes great over a giant heap of perfectly cooked Jasmine Rice, and some additional soy sauce on top. 🙂

Recipe Tips

  1. I mentioned this in my Honey Mustard Garlic Chicken recipe as well, but when coating chicken it really helps to get everything in place before you start so you don’t have to continually wash your hands and then reach for the forgotten items. I’ve only done this a million times before I started telling myself over and over again to get everything in place before starting!
  2. Use one hand to dip in the egg, and then the other to coat in cornstarch. If you try to use the same hand you will have a hot mess! After working in restaurants and coating about a million pieces of chicken, sometimes this still isn’t second nature to me. The temptation to dip with the same hand is still there! haha
  3. This is a base recipe. If you like more salty, add more soy sauce! If you like more sweet, add more brown sugar!

Hello! Welcome to my first post in 2018, and my first post under a brand spankin’ new name! This Sticky Honey Mustard Garlic Chicken is the perfect way to start off the new year, but first….


What gives on the name change!?!?!

I’m ready to drop a few truth bombs right now, and it may not be pretty but it is genuine and it is me. I was struggling with the name 3boysunprocessed. Struggling for a very long time. In 2018 one of my goals was to make this blog a more comprehensive look at my life. To do that I desperately needed to change the name and break out of the box of unprocessed eating.

Four years ago, my life was completely different! When I started this blog, I was so passionate about cooking with the least processed ingredients. What you saw was what I was feeding my family. It was fun to me then, it was my own little project that I loved and babied. It grew my love for photography, it gave me a reason to talk about my children and document my life, and it was great. I was stunned when people actually cared. But then….

Life happened. My husband started a new career that took him on the road and away from home 5 days a week, we had another baby (and have another on the way now), I started a photography business, and my wee little babes who would eat anything suddenly didn’t want my whole wheat macaroni and honey sweetened delicious treats anymore. Things were different, my family was growing and changing, and my blog needed to reflect that.

Life can be extremely busy at times. Every time I thought to myself that I’d like to post a new recipe, I realized that it may not fit into the unprocessed box I had put myself into. I want to share my love for food here, and ultimately I have to be true and honest that this is not how I cook anymore. Of course, I am still cooking fresh, homemade meals for my family. However I’ve stopped stressing over certain ingredients such as white pasta and cane sugar. My sanity needed a break from hyper obsessing over my kids going to a birthday party and eating a hotdog bun. So I let go a little, and it feels great!

Looking into 2018, I’m really ready to share more stories about life, my family, my cooking, my Lipsense business, my love for photography, and so much more! I absolutely love looking back at all of my posts from when my boys were all super tiny, and I want to keep sharing the special little details without the stress of being in any kind of box. Cheers to 2018!

Now that the cat is out of the bag, shall we move on to this Sticky Honey Mustard Garlic Chicken? It is oozing with delicious Asian inspired flavors, simple ingredients, and my latest pregnancy craving… Jasmine Rice and soy sauce! It combines a few simple ingredients to check off every box on the BEST CHICKEN EVER list… sweet, salty, perfectly crunchy, and smothered in a delicious and easy to make sauce.

THIS IS CHICKEN HEAVEN.

The Recipe

One of my favorite way to make takeout inspired chicken is to dip it in egg, coat it with cornstarch, and then cook it on the stovetop. It gives a deep fried texture without actually deep frying or ordering takeout from a place that may or may not be using trans fats to fry their food. I love me some Panda Express, but I hate the way I feel after eating mystery ingredients. This is the perfect way to make it at home and know exactly what you are eating.

The most important step when cooking this Sticky Honey Mustard Garlic Chicken is to make sure your meat is properly seasoned. Don’t forget to season your chicken before you bread it. I always use coarse Kosher salt to season meats, it has never let me down! A sprinkle over all of your chicken chunks will work wonders.

Coating the chicken is easy, but can be messy! One thing I learned while working in restaurants and coating millions of pieces of chicken is to get everything where you need it before you start, and use one hand to dip and the other to coat. No matter how bad you want to just go right from the egg to the cornstarch with the same hand… DON’T DO IT or your hands will be a hot mess.

The sauce is super easy to put together! Cook the garlic, then add the rest of the ingredients and viola! It is super versatile, so if you like it a little more sweet, add more honey. If you like it a little more salty, add more soy sauce! If you don’t have whole grain mustard, use dijon! The sky is the limit here, this is really just a base recipe.

Also, apparently is is really easy to burn Jasmine rice. That is all I’m going to say about that. HAHA

Coconut, Strawberry, Chocolate Chip Scones

I’m so very much still in the Valentine’s Day spirit over here with these Coconut, Strawberry, Chocolate Chip scones! Or maybe, just maybe.. I had some strawberries and chocolate left over from my Salted Chocolate Covered Strawberries so I decided to put them to good use! <3 <3


Speaking of the Valentine’s Day spirit, I blogged about our Shrimp and Parmesan Strip Steak yesterday. It was our family Valentine’s Day meal and it was delicious! Valentine’s Day is always a great reason for me to go above and beyond in the kitchen and we had a great day. My husband also ate about 4 of these scones, so I’d say they were a hit!

Speaking of the scones, strawberry and chocolate are always a winning combo! I remember one of the first weeks in pastry arts school our chef asked us to think of some flavors that we’d like to put together in some cream puffs. I have no idea why but I was so nervous about it! I thought all day about what I wanted to make and at the end of the day all I could think of was strawberry pastry cream in the middle and chocolate on top. I was almost embarrassed to tell the chef that this is what I thought up. It just seemed to be too obvious of a choice.

And the chef was super happy about it and was like absolutely a great combination!

Never. Doubt. Yourself. 🙂

Sometimes it is totally fine to go with something safe!

 

Coconut Milk

So I feel like canned coconut milk is one of the best kept baking secrets! I have used it in everything from cookies to cupcakes to these scones and LOVE IT. I use it as a substitution in so many recipes and I have yet to have anything totally fail on me. If you are substituting coconut milk into a recipe have no fear, your final product will NOT take on an extremely coconut-ty flavor, and you may not even notice any coconut at all.

I also used the coconut milk in the glaze, which I felt was a bit more coconut then the scones themselves. If you are not a fan of coconut I would just omit it all together and use sour scream in the recipe, and regular milk in the glaze.

I know everyone thinks of the non-dairy coconut milk when you mention those two words, however the canned stuff is so much better in terms of ingredients. Yes, it is a fat source (I use the light version). However there are only 3 ingredients in the Native Forest Canned Coconut Milk that I used! 3 ingredients! They are organic coconut, water, and organic guar gum. If you have ever checked out the ingredient list on a carton of coconut milk they are quite lengthy.

Easy Homemade Hamburger Buns

Today I’m ditching the whole wheat flour for a soft and fluffy Homemade Hamburger Bun made with unbleached bread flour (King Arthur’s brand). Let’s be honest here… the two are just not the same!


I’ve been experimenting a lot with baking breads lately and I’ve come to realize that using all whole wheat flour will NOT yield the same result as using bread flour. I used to think I could just sub whole wheat flour in for anything. The more and more I experiment the more I’m coming to see that making that substitution has been causing me to think I’m just not good at baking breads. I’ve been longing for a perfect result…and have come up short time and time again.

I’ve known bread flour was a completely different animal for years, after all I did spend $25,000 on Baking and Pastry School. You see, bread flour has a higher protein content which makes it better for gluten development. This is going to give you a nicer rise and a fluffier product. I’ve seen people making substitutions between all purpose and bread flour, however I strongly recommend using bread flour for this recipe because I promise….it is just perfect!

I know yeast breads are scary… and believe me… I know why. With all of my experimentations lately I fully understand the complete letdown you feel when you’ve dedicated time, energy, and money into something that just doesn’t produce the results you were looking for. Today I’m taking the “scary” out of Homemade Hamburger Buns because if you follow this recipe I promise you will get the same results pictured. All of my Hamburger Buns were perfect, and far superior to those processed, shelf stable buns you buy at the supermarket that NEVER mold!

A few other notes about these Buns:

  • Do not skip the egg wash! Egg wash is simply an egg + a bit of water brushed onto your buns before you bake them to give them that nice golden brown color. I have tried to cut corners by skipping the egg wash on yeast breads over and over again and every time I end up thinking “Gee I wish I would have used that egg wash” when my product isn’t nice and golden brown like I hoped it would be.
  • Temperature matters. Temperature is a crucial part of baking yeast breads. You can actually kill the yeast if your water is too hot, so be careful. I never take the temperature of the water with a thermometer, but when my water feels ever so slightly warmer then lukewarm, that’s what I go with. Obviously, that’s not the “professional” method of figuring out water temperature but it has never failed me. How quickly your dough rises also depends upon the temperature of the room your dough is in. My kitchen is always a little warmer then the rest of the house, which is great for rising dough. In the winter I turn my oven on and sit the dough on top of the oven. Again, nothing “professional” about this, just my own experience.
  • This dough can be turned into a number of things: Hamburger Buns, breadsticks, garlic bread, hoagie rolls…. you name it. I adapted the recipe from this Almost Famous Breadsticks recipe from Food Network. It is definitely my new favorite dough!

Oh hey there pretty little salty and sprinkled chocolate chip cookies! Oh how I’ve been waiting for February to show it’s face just to have reasons to use all of my naturally dyed sprinkles I’ve been stock-piling! Ok, so it isn’t exactly February yet, but it is really close, right?!?! 🙂

Yes, that’s right. Valentine’s Day is upon us. For some couples this “holiday” means going on extra special trips and doing all kinds of fabulous, lovey-dovey things. For couples with kids this “holiday” means reminiscing about the days before you had kids and you could do those things. HA! Ok, you know sometimes we just have to be real and this my friends is the truth about Hallmark “holidays” after having kids!

I think last year we all went out to eat as a family. My husband can tell you, I’m always the voice of reason when he suggests such outtings.

“Buuuut remember last time we tried that and it was a horrible event that I never want to relive, like ever in my life again?”

Yeah, it never really goes the way you were thinking when you have small children. Two of our kids are past the *NEVER TAKING OUT TO EAT, EVER* age, but we still have little baby Christian who is kind of still unpredictable in public. So that means I’ll probably just get my husband a plant for Valentine’s Day again and then we can name it Heart-y or something. Then of course I will have a huge tray of fresh, just out of the oven chocolate chip cookies to go along with my completely random present. Works like a charm every time!

Ok, now that I’ve just given all of you un-married and un-kid-ed folks the truth about well…life… let’s move on because Hello! These cookies are pretty and delicious and slightly better then your average cookie. By slightly I mean that we subbed some whole wheat flour, and added sprinkles that aren’t so offensive because they don’t contain trans fats (partially hydrogenated oils), like most sprinkles, and they are naturally dyed. No laboratory chemicals in these cookies! 🙂

Ok, so you might be wondering why I’m not going 100% whole wheat on these because normally, I do. The truth is I just can’t get a 100% whole wheat cookie to taste good. I’ve tried, and tried, and failed, and failed. Then I realized it is a damn cookie. Just put some white flour in it and forget about it! So I did, and they were perfect, and delicious, and gooey, and chocolatey, and ever so slightly salty in the most perfect cookie way. The End!

*I used 3 different naturally dyed sprinkles on these cookies but my most recommended naturally dyed sprinkles are these India Tree sprinkles. The price reflected is for a bulk order but you can find them individually in stores and on Amazon. I’ve found them in stores for $4-5 a jar so it is cheaper if you can find them locally. Wegman’s carries a ton of their line.

Whole Wheat Funfetti Cupcakes

Confession: I love sprinkles, and cupcakes, and cute baked goods. They brighten my life when everything around me is blue, green, and super hero colored. You know, the 3 boys struggle… it is real folks! I love cupcakes so much I even have one tattooed on my foot, complete with sprinkles and a candy heart. I think that means I’m the official Knower-of-all-things-sprinkles, right? Right!

But then a while ago we kind of had a falling out, the sprinkles and I. I figured out their dirty little secret. It was a little too late, ya’ know with the tattoo and all? The proof was right there, the whole time. All I had to do was flip the little plastic bottle over and take a glance at the ingredients, and we were done-zo for good! Why Wilton, why? Trans fats and artificial colors? How are you going to do me like that Wilton?

I could keep going on about boxed cake mixes, sprinkles, sixlets, and the like but I’ll shorten it up real nice for you… break it off with these products now, it’ll save you in the long run!

Since the sprinkle break-up of my own life I’ve been on the lookout for a better product. Mainly one that is naturally colored and doesn’t contain any partially hydrogenated oil (trans fat). I’ve tried a few different products and while they were all better I liked one brand the best: India Tree Natural Sprinkles. The one big thing that makes these sprinkles different is that the colors don’t bleed once they are on the product. I experienced color bleeding with all of the other brands I tried, although I would still highly recommend them over standard sprinkles any day! One thing I should mention, India Tree’s products are NOT Non-GMO verified, and do contain soy lecithin, which is an ingredient we try to avoid. With that being said, a girl can’t have everything!

You can probably imagine my excitement when a huge rack of India Tree sprinkles appeared at the super-awesome grocery store I frequent. Of course, my husband was along for that trip so it didn’t seem like the right time to go on a naturally dyed sprinkle buying spree. Husbands just don’t understand!

A few days later I was there again and let’s just say I got a few bottles. It’s the Holiday Season! I needed those sprinkles! The internet needs a #betterbaking Funfetti Cupcake recipe! Best part was I got to choose my own mix of colors. Aren’t they puuurrrttty? 🙂

Now comes my whole wheat disclaimer, because I HAVE to say this. I’ve served whole wheat cupcakes to dozens of family members and friends and not one person even questioned them being whole wheat. You know what that means? They didn’t even know. You know what else that means? If you use the right whole wheat recipe your cupcakes will not come out dense and dry like the way people describe whole wheat products. What dense and dry cupcakes? I don’t know because I don’t make them. I promise, you will probably not be able to tell a difference your kids will definitely not know, and your husband will be too busy wondering where all the naturally dyed sprinkles came from to notice either.

This is a whole lot of ‘fetti in my face and I kind of like it! 🙂

Last but not least let’s talk icing. I don’t love a sickeningly-sweet powdered sugar icing. However, I think if you prefer a sweeter icing these would be the perfect compliment! I have quite a few really delicious icing recipes so here are the two that I think match these the best:

Simply Vanilla Buttercream (sweeter):

Ingredients:

  • 1 and 1/2 stick unsalted butter (softened to room temperature)
  • 1/4 cup sour cream
  • 2-3 cups organic powdered sugar
  • 1/2 vanilla bean pod or 2 tsp pure vanilla extract

Directions: Soften butter to room temperature while baking cupcakes. This step is very important!! Beat butter until very smooth, scraping down the sides of your bowl numerous times to make sure all lumps are out. Add sour cream, powdered sugar, and vanilla. Add additional 1-2 tbsp. tapioca starch or non-gmo corn starch to thicken icing to desired consistency without adding more sugar.

Naturally Sweetened Cream Cheese Icing

Ingredients:

  • 1 (8 ounce) package full fat cream cheese
  • 4 Tbsp unsalted butter
  • 1/4 cup + 2 Tbsp pure maple syrup
  • 3-4 Tbsp tapioca starch
  • 1/2 vanilla bean pod or 2 tsp pure vanilla extract

Directions: Soften cream cheese and butter to room temperature. Beat cream cheese until very smooth, scraping down the sides of your bowl numerous times to make sure all lumps are out. Add butter, continue beating until very smooth. Add maple syrup, tapioca starch, and vanilla.

White Chocolate Orange Gingerbread Cupcakes

Hello November! So glad you are here! I officially have the next 2 months to bake up a storm. Love, love, love!


Speaking of love… these Gingerbread cupcakes totally converted me to a Gingerbread fan. I’ve been on the molasses train pretty much all year and I have been patiently waiting  for the holiday season to bust out some Gingerbread recipes because molasses is kind of awesome. By kind of awesome, I mean it might just be one of my top 5 fav ingredients. Why? Because it gives such a boost of flavor to all baking! These cupcakes highlight the goodness of molasses, with a hint of orange, and a bit of spice. Can you think of a better holiday combination?

PLUS…. remember when we started #betterbaking by calling out all of the nasty ingredients being thrown into dessert recipes all over the inter-world? *Ahem….Cool Whip, Trans fat laden sprinkles*  Well, you can add ANOTHER cupcake recipe to the #betterbaking books because this one is simple and to the point. No weird stuff, no convenience products loaded with random crap. Just the simple, real deal… and THAT’S IT! 🙂

Now, as if you didn’t know this was coming….We need to talk about white chocolate. Yes, the dreaded trans fat talk is coming. I know, it is such a Debbie Downer in all of this cute cupcake fun. But, but, but…. we need to talk about these companies that put dangerous fats in their products knowing full well that they are dangerous! Upon some investigation at the grocery store I came to the conclusion that ALL of the white chocolate morsels/chip contained partially hydrogenated oils (non-organic brands). Hershey’s even called their white chips “Premium” yet they were made with dangerous trans fats. Come on now Hershey’s! We know you can do better then that for us!

Soooo….. I suggest taking a look at your white chocolate ingredients before purchasing a product. If it is organic, AWESOME! Then we know that eliminates most of the cray-cray ingredients we are trying to avoid. I used a Green & Black White Chocolate Bar and it worked great, tasted great, and didn’t contain any added crap. It cost me $2.99, which was only a few cents more then the Ghiradelli bars. If you can’t find an organic bar, look for a bar that doesn’t contain any partially hydrogenated oils, or artificial flavors. Companies like to throw in additional unknown flavorings but nobody likes that weird, fake taste that comes from those flavorings anyway!

And then there was that time when I thought I was getting red cupcake liners, but apparently they were pink.  The grocery store must have been convinced they were red too, because they were sitting around all the baking stuff in the middle of the grocery store surrounded by huge Christmas Trees and the green liners. *face palm* But hey, they are super cute AND match my logo, so oh well! 🙂

Cinna-Swirl Sticky Bun Cupcakes

Yes, I’m still #Betterbaking! And yes, it just got 1,000 times yummier with these Cinn-Swirl Sticky Bun Cupcakes that take two wonderful baked goods and smear them together to create a pretty, decadent, and fall inspired treat like no other IN THE HISTORY of HISTORY!

Now, hold onto your britches because we aren’t stopping there! These cinnamon-y cupcake delights are topped with Cream Cheese Icing that is naturally sweetened with pure maple syrup. Is this real life? A completely pipe-able, smooth, and delicious icing that stays in tact without the use of 10x sugar? My baking life is now complete!

Two things: Yes, this really happened! And yes, I will be using this method to make icing from here on out during our #Betterbaking series. You know, that little thing I created to help people cut processed ingredients like Cool Whip, and Jell-O Pudding Packets out of their lives forever? Cool Whip and it’s trans fats be gone forevs!

So how is it that I can put maple syrup aka something liquid, into cream cheese and still be able to pipe it onto a cupcake in a smooth and delicious looking way? Tapioca Starch! I know, I know, this sounds like some crazy “health freak” ingredient, but remember that pudding? You know, the one nobody wanted to eat in Elementary School because it was orange and confusing? Yep, that pudding is thickened with the same ingredient so apparently it isn’t so weird and “heath freak” after all. You can find it at almost any grocery store in the organic section or baking section and it works just like cornstarch, minus the whole GMO corn ingredient thing.

Tapioca Starch will dissolve JUST LIKE 10x sugar, and tighten your icing up perfectly so it isn’t dripping down the sides of your cupcakes and making you scream “I hate Pinterest for giving me this horrible idea!” If you aren’t too keen on using a new ingredient, go ahead and look for an organic 10x sugar, or a Non-GMO certified cornstarch to use in place. In my Pumpkin Whoopie Pie Cupcakes, I used an organic 10x sugar so those measurements are over there if you’d like to go that route.

But seriously, how perfect is that icing? 🙂

Now, let’s talk cake because I love me some cinnamon cupcakes to remind me that it is indeed fall and I do need more cinnamon in my life like right now! I took a basic vanilla cupcake recipe and divided the batter in half so I could add LOTS of cinnamon and a hint of molasses and vanilla to the batter to make the swirl. Got it? Don’t worry, everything you need to know is in the recipe. If you aren’t really feeling the extra time to make the swirl, just go ahead and add the extra stuff to the batter. My swirl wasn’t quite as swirly as I would have liked it to be, but I still ended up with a double colored cupcake that was pretty. A girl can’t have everything I suppose.

Now that we’ve got that out of the way I’m going to share some MORE cute-ness in the form of a really cute baby that just happens to be of my making. Usually I don’t share pictures of my kids, but this was just TOO cute not to share. Not only that, my 3 year old asked me if he could have the “pretty cupcake.” See, my boys are coming around! 🙂

Caramel Apple Cupcakes

Caramel and Apples have  been friends forever. I am so glad they are besties for life because let me tell you… it makes food blogging so much easier! I don’t have to spend long hours thinking about elaborate cupcake recipes. I don’t have to think up some new and crazy food combination. I just have to put two things together that were made for each other… caramel and apples!


Breaking news: I LOVE PAPER STRAWS! Yes, I saw an isle full of paper straws at Target and boy oh boy do I have about 60 more reasons to continue taking pictures of food now! Are they not just the best thing that ever happened to food blogging? Ummm yes I do believe so. I can now go to Target in all of my yoga pants and messy hair glory and wander through the paper straw isle like I don’t have a care in the world!

In other breaking news if you have a husband make sure he knows paper straws don’t mix well with wee lil’ ones who like to chew on things. Apparently mine wasn’t aware of this information because I found baby Christian chewing the top off of a paper straw my husband put in his cup. Yeah, not a good mix! Fear not, Mommy swooped in and grabbed that straw right out of his cute little mouth and saved the day. Ok, maybe it didn’t go that smoothly but somehow I finangled that crap out of his mouth. Baby Christian is ok and was not hurt in the making of these cute cupcakes!

Now let’s talk about how crafty I’ve become since blowing through the paper straw isle at Target because this is the breaking-est of breaking news. Who knew DIY cupcake toppers could be so easy and so cute. 😉 All I did to make the toppers was cut the straw on an angle, then tape a construction paper leaf onto the straw. BAM! That is it. I do believe this is officially called crafting for the non-crafty folk? Why yes, yes it is. Now please excuse me while I hand model this genius idea.

*Pro non-crafty folk tip: Fold a piece of construction paper in half to cut out the leaf to get it perfect. I do believe I learned this pro-tip in Kindergarten. Thank you Mrs. Margerum!

Maybe we should just get back to food because I’m more comfortable being a foodie then a craftie. There are a few components that go into a Caramel Apple Cupcake so let’s discuss:

  • The amazing, moist *hate that word*, whole wheat goodness that is the cupcake
  • Cinnamon buttercream
  • Apple pie filling
  • Caramel drizzle

I know, I know, that is a lot of steps! But I promise they are ohhhh soooo delish and totally worth a few extra minutes to make the filling and drizz.

On another note, I broke one of my own rules and used 10x sugar in the icing. Being a former pastry chef, this is basically the lazy way to make icing but I know some people are intimidated by cooking sugar so I wanted to provide a recipe that did contain 10x, and suggest a brand that is trustworthy and non-GMO. Here is the brand I used. This link is for 20 lbs of sugar, hence the price. You can find it at most grocery stores in the organic section.

 

 

Apple Pie Cupcake Filling

Ingredients:

  • 2 large apples (3 small)
  • 1 Tbsp butter
  • 2 Tbsp brown sugar (I used my Homemade Brown Sugar)
  • 1/4 tsp ground cinnamon

Directions: Dice apples small. Put apples and all other ingredients in a small sauté pan and cook over medium heat until apples are tender and sugar becomes syrupy.

Caramel Drizzle

Ingredients;

  • 1/4 cup brown sugar (I used my Homemade Brown Sugar)
  • 1/8 cup milk
  • 1 Tbsp butter
  • pinch salt

Directions: Put all ingredients in a small sauté pan and cook over medium-high heat until thick and bubbly, about 5-6 minutes.

Mini Meatball Stir fry

Meatball Stir Fry… is this even legal? Why yes, yes it is and I believe they (whoever they are) like to call this Fusion Food. You know, taking two things and putting them together to create something so much better than the two things by themselves. Yeah, Fusion Food people. Let’s all get on the Fusion Food Train!


Truth be told, there is a restaurant by my house that I pass often called Fusion Fire. They have a bunch of creepy statues outside but I’ve heard the food is good. Another truth be told, when you have kids you don’t get to go out to eat unless you want to deal with someone peeing their pants at the table or knocking a drink over on the waitress. I kid, I kid, those things never happened but they could have if we were brave enough to take our kids out to eat in the first place. Maybe in about, I don’t know, 10 years or so we will get to Fusion Fire, but for now I’m doin’ it homemaker style and it is kind of awesome. 😉

Can I just point out the fact that meatballs are ugly. Like step-sister with a wart on her chin ugly. But come now, let’s not get all judge-y and such. Let’s forget about those warts and remember the truth. Meatballs are delish. And step-sisters with warts are people too!

Now you may have taken notice… I’m using white rice. Yes, I’m a person too (just like that steppy sis) and sometimes I bend the rules. Brown rice is not bleached but it just isn’t the same. If I’m eating a bunch of veggies with a few mini homemade meatballs then I’m going to have my big mound of white rice and drops of soy sauce on top. You know, Fusion Food just isn’t the same without the white rice, right? Precisely.

If you are feeling like you can resist the sticky white rice and soy sauce drizzled on top, please do! Brown rice would also go lovely with this. And just because I used white rice once doesn’t mean I’m selling out and going all Dump Cake on everyone. Don’t worry, the unbleached grains will be back tomorrow!

No Dump Cakes, and no nasty breadcrumbs either. Believe it or not those canned breadcrumbs (Progresso, Kraft, etc.) all contain a slew of ridiculous ingredients that have nothing at all to do with bread. Not even remotely! Progresso’s “breadcrumbs” contain 59 ingredient. Why??????????? Is all I have to say to that! Just so you can’t say I didn’t warn you…. buy the organic whole wheat version or make your own using 2 slices of whole wheat bread toasted and processed in a food processor.

This is a two step recipe. Make the balls (oh the kitchen jokes that come about when people are making meatballs, especially in a room full of guys!), and then make the veggies and sauce. Of course you can throw your rice on at any time during this process as well. If you don’t want your balls to be spicy, just omit the fennel and red pepper flakes.

Veggie Stir Fry

Ingredients:

  • 1 tsp sesame oil or olive oil
  • 1 bell pepper
  • 1 cup sugar snap peas
  • 1/2 cup corn kernels (I removed them from one of my non-GMO sweet corn cobs that I got at the market.)
  • 2 Tbsp reduced sodium tamari soy sauce
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp sweetener (I used molasses. You could also use honey.)
  • 1/2 tsp garlic powder

Directions: Heat large sauté pan with sesame or olive oil. Put veggies in pan, and cook over medium heat until veggies are beginning to get tender. Add tamari soy sauce, balsamic vinegar, sweetener of choice, and garlic powder. Mix everything well and allow to cook to desired tenderness (I like crunchy veggies). Cook rice according to package directions. When meatballs are finished toss in pan with the stir fry and love on some Fusion Food!

Red Palm Superfood Cookies

Yes, you read the title right… Superfood cookies! If you’ve been following along you know I have 3 boys. I like to make treats for them every once in a while because I don’t want them to feel like we are “weird” or “different” then other kids we know, and who doesn’t love cookies? My husband had been making these oat, walnut, and maple cookies and I decided to take them to the next level by using red palm oil. If you haven’t heard of this stuff yet it is incredible!

Health Benefits


Organic virgin red palm oil is the king of all oils. It is better then olive oil, coconut oil, and all the other oils that have great health effects on us. My husband actually just picked it up at the store one day, not even knowing what it was, so I Googled it and found this article from Dr. Oz describing how amazing it is! Here is an overview of the health benefits:

  • Rich in tocotrienol which is cancer fighting
  • Fights heart disease and high cholesterol by aiding in the removal of plaque buildup in arteries
  • Helps maintain proper blood pressure
  • Antioxidant rich- aids in preventing osteoporosis, asthma, cataracts, macular degeneration, arthritis, and liver disease
  • Slows down premature again by protecting the skin from UV rays from the sun
  • Protects against Alzheimer’s by improving blood flow to brain cells and stopping the damage of brain cells from occuring

I don’t know about you, but sign me up for the Red Palm Oil train right now!

The Cookies

Not only will you get all the health benefits from the Red Palm Oil, the rest of the ingredients are whole, natural, and also packed with nutrition! These cookies contain oat flour and rolled oats as well as all natural sugar so your body will not experience the “crash” that comes with refined flours and sugars. The best part, they taste AMAZING! I think sometimes people think of health food as cardboard-like but its 2014 and things have drastically changed!

The Oil

The most important thing is to choose the right oil. Do not get any type of refined version, as refining processes ruin the health benefits of oils. I’d highly recommend Nutivia brand Organic Red Palm Oil. It is relatively inexpensive and can be found in the “organic” section of grocery stores. If you are looking among the highly refined oils and can’t find it, look in another section. Here is a link to the oil on Amazon if you can’t find it locally.

Spicy Black Eyed Pea Burgers (Morningstar Alternative)

Buying good food to feed a family of 5 can be expensive! One thing we try to do to save money, try new things, and be healthier overall is take the focus off of meat in our meals. There are so many unknowns about the meat industry in America, and quite frankly I just don’t trust any of the big name brands. We do buy organic meats, but they are super expensive! I do use a few tricks to stretch the meat we buy, but I also love throwing in one or two meatless meals every week. I like experimenting with new ingredients and creating new recipes that do not contain meat and so far my family has really loved all of veggie friendly meals I’ve served. My kids do love beans and I’ve been serving lentils to my toddler since before he could even talk. Both of these are awesome alternatives to meat and contain tons of protein and fiber.

Flounder Cakes (With Whole Grains and Mushrooms)

If you saw my Toddler Lunch post today you might have known a Flounder Cake recipe was in the works! Most people think of Crab or Salmon cakes when it comes to a dish like this, but the truth is you can use any type of fish that you like. My husband always buys Flounder but the fish in these is the interchangeable part. This recipe would go with just about any type of fish so you can use what you have on hand.

I have to admit that making these, or any type of fish based cake, is a process that looks “ugly” until the end when they are cooked. There is something about grinding up fish that is slightly disturbing but having worked in restaurants for years I am used to it. If you are making these and start thinking I’m completely crazy for suggesting this, just wait until they are cooked! I promise they are delicious! This recipe does use my Whole Grain Breadcrumbs, and if you check out that post you will see why I never use store bought breadcrumbs (I’ll give you a hint they contain 59 ingredients!). I serve these cakes a number of ways but they go great on a bed of spinach or with some brown rice and veggies.

Whole Grain Mozzarella Sticks

Who doesn’t love a good mozzarella stick once in a while? I know I do, and making them at home is simple and easy. You will not miss the fried version after tasting these, and your kids won’t either! This is a great recipe for a party, or just as a snack for your kids. You will need my Whole Grain Breadcrumb Recipe for these, which is simple and easy as well, taking only about 5-10 minutes from start to finish. I did omit the parmesan cheese from the breadcrumbs because I didn’t really think they needed any extra cheese! A batch of the breadcrumbs will give you more than enough to bread a few sticks, and save some in the refrigerator for another meal. Tonight I am making Fish Cakes so I knew whatever I had left would be used up in those. I love a recipe that is versatile and helps me plan future meals.

For some reason people classify chicken nuggets and tenders as food for kids. What irritates me about this is the fact that chicken nuggets are made from scraps and other parts of chickens that was otherwise unable to be used.  Basically we are saying “Let’s feed our kids all the scraps” instead of saying “Let’s feed our kids the most nutritious food we can.”  See how this doesn’t really make sense? If your wondering about chicken nuggets here is a great video to set the record straight about what is really in them. Chances are you have seen the “pink slime” but it is a great reminder to me of why my family stays away from this stuff!

The good news is you can make your own chicken tenders (or nuggets) with whole ingredients. I do have a few secrets when it comes to my chicken tenders and I’m going to share them with you today! The most important factors to making your own are seasoning them correctly and pounding your chicken.  I use chicken tenderloins and pound them until they are thin. Thin chicken gives you the nice crunch kids love. Here is an example of how I do this. I simply place a plastic baggy over the chicken and pound lightly to flatten.

If you are not sure of the tool you would need to do this it is just a simple meat hammer or tenderizer. Here is the link to one.
