This Greek Pasta Salad Recipe is the perfect picnic or get together tag a long! With my secret ingredient, this salad brings the flavor and is easy to throw together at the last minute.


Greek Pasta Salad Recipe This Greek Pasta Salad is my favorite! My secret ingredient, the brine of the feta cheese, takes this recipe to the next level. I have tried Greek Pasta Salad with the brine and without the brine, and my WITH brine recipe is 100% my favorite of all time pasta salad. The saltiness of the feta paired with a hint of sweetness from the tomatoes and a delicious homemade dressing makes for the perfect pasta salad. If you aren’t familiar with what I am talking about, you can buy feta cheese in a brine, which will be a liquid substance that the cheese is in. I prefer Feta in brine because I feel like the crumbled feta can be a little dry and lacking flavor. In any recipe I am using Feta cheese I do prefer Feta in brine. Pasta salads are especially important because putting a little bit of the brine in with your dressing creates the perfect salty, delicious dressing to compliment the pasta, veggies, and feta cheese. If you are skeptical or just not feeling it, you can omit the brine but I’m telling you it is so good! Generally, I buy my Feta cheese at Wegman’s, because they always carry feta cheese in brine. I have struggled at other stores to find it all the time, but if I don’t see it in the regular cheese section I will always check the specialty cheese section and it is usually there. The crumbled feta just doesn’t compare so keep looking until you find it! 🙂 I have made this recipe with several different pasta varieties, but I like the orecchiette pasta the best. If you are looking for a swap, I would suggest rotini, small shells, or cavatappi. All of those pasta varieties have worked great for me in the past. The orecchiette creates a nice balance and that is why I prefer it but the others can certainly work too. Print

Description

A delicious, refreshing pasta salad that is a perfect side dish for any occasion.


Ingredients

1 pound orechiette pasta (rotini and shells work great too!)


1 pint cherry tomatoes

1 seedless cucumber

1/2 red onion

8 ounces feta cheese

1/4 cup feta cheese brine

1/2 lemon, squeezed

1/4 cup white vinegar

3/4 cup extra virgin olive oil

1 tsp dried oregano

salt + pepper to taste


Instructions

Cook pasta according to package directions. Don’t forget to salt your pasta water!

For the dressing: Add 1/4 cup feta cheese brine, 1/2 lemon squeezed, 1/4 cup white vinegar, 1 tsp dried oregano, and a dash of salt and pepper to a large bowl, blender, or food processor. Slowly drizzle in 3/4 cup extra virgin olive oil. If you are using a bowl, whisk vigorously while you are drizzling in your olive oil. (I used my Vitamix.)

Chop cherry tomatoes, seedless cucumber, and 1/2 red onion and place in a large bowl with 8 ounces feta cheese, and cooked pasta. Pour dressing over ingredients and toss to coat evenly. Sprinkle with additional salt + pepper + oregano if desired.

Store in an air-tight container for up to 7 days in the refrigerator. Recipe is best if made 1 day ahead of time to allow flavors to come together.

Italian Avocado Salad

This Italian Avocado Salad is everything avocado dreams are made of! Delicious, fresh ingredients, with a creamy homemade Italian dressing…. you really can’t go wrong here! Pair it with your favorite protein and you have a delicious meal! 🙂


I was at the grocery store today and had in my mind that I’d like to make an avocado salad with my Creamy Italian Dressing recipe. I have been trying to find new ways to eat avocados because of all the health benefits. This recipe is an avocado home run!

Not only was the recipe delicious, I found the PERFECT bag of avocados. Not too mushy, but not un-ripe. Small seeded so that one side doesn’t have to be completely uprooted to remove the seed. The skins peeled right off. I mean, in the avocado world I basically hit the jackpot! I was peeling those babies like YESSS this is avocado life.

*Side note: You should start peeling your avocados! A lot of the good nutrients are right under the skin and when we scoop them out instead of peeling we loose important stuff. Peeling also allows you to cut some pretty impressive chunks for this salad. I simply slice the avocado in half, then slice it into chunks when it is still in the peel. If your avocado is perfectly ripe you should be able to start peeling it from one of the edges. If you are finding it hard, slice the little nugget on the end off and you should be able to start peeling.

Keto Diet Update

This is the part where I talk about my diet, so if you aren’t interested just scroll. 🙂

I mentioned in my Keto Approved Burger post that I started the Keto diet. I’ll be 100% honest here, it hasn’t been unicorns and rainbows. I’ve had some ups and downs due to breastfeeding and being concerned about the safety during this time. I’ve gotten off track quite a few times but somehow I always seem to reset and start again. I’m on a roll this time, and hoping to continue!

Storing Your Italian Avocado Salad

We all know that avocados can brown very quickly! The dressing in this salad prevents this to a certain degree. I would suggest making the salad at the time you are going to eat it, and finishing it within a day or two. I’ve stored mine overnight and had no browning/turning to mush but the second day I finished it.

If you are making the salad for a gathering or picnic I would suggest putting it together 1-2 hours before you go. A bit of time in the refrigerator is great because it allows the flavors to come together, but isn’t enough time for the avocado to start looking funky.

One More Thing

My Creamy Italian Dressing recipe yields about 2 cups of dressing, which is a lot more then you will need for this salad. I cut the original recipe in half for this salad and it was plenty. If you’d like to have some extra dressing (it is super delicious), then you can double the dressing ingredients. In my original recipe I was using a food processor to make the dressing, however I no longer have that (long story), so I just used a bowl and a whisk. The food processor makes a thicker dressing, but you certainly can get away with just whisking super vigorously and making sure you pour your oil in slowly. I also omitted the red pepper flakes because I just didn’t think they would mesh well with the avocado.

Grilled Cilantro Lime Chicken & Guac

Grab your tortilla chips and get prepared for some fresh guacamole and perfectly grilled chicken! This Grilled Cilantro Lime Chicken & Guac does not disappoint in the flavor department and takes only a few minutes to prepare. Weeknight grilling for the win!

Truth: I’m trying to fit more fruits, veggies, healthy fats, and lean protein into my diet. All winter I wasn’t taking into consideration what I was eating, and I found myself mostly snacking on carbs all day. In my Balsamic Glazed Grilled Chicken recipe, I discussed prepping meals ahead of time to try to balance my diet a bit more. So far it is working great, except when my husband comes home and eats all of the portions I made in advance. Meal prep fail! His job is super labor intensive, so I guess he gets a pass to go on this one. 🙂

Grilled Cilantro Lime Chicken

Cilantro is super popular, but I feel it is so underrated! Every time I purchase a bunch of cilantro at the grocery store I:

  1. Immediately smell it 1,000 times
  2. Make a gorgeous salad with a cilantro lime dressing
  3. Make fresh guac, of course
  4. Start putting it on everything until it goes bad

But for real, this Grilled Cilantro Lime Chicken & Guac is one of my favorite uses for it. You just can’t beat a perfectly grilled piece of chicken, seasoned to perfection, bursting with bold flavors, and perfect for leftovers! I mentioned meal prepping earlier and this chicken made awesome salads the rest of the week for me. I tossed it with some dark leafy greens, a few tortilla chips as croutons, fresh avocado, cherry tomatoes, cheddar cheese, and my favorite ranch dressing. Yum!

Grilling Tips

I have a few grilling tips I’ve repeated here about 1,000 times but here goes again! I suggest generously seasoning your meat with coarse kosher salt and black pepper beforehand. This is an important part of this recipe because bland chicken is no good! Next, I would suggest using thin cut chicken breasts, or filleting and pounding your chicken breasts flat with a meat tenderizer. This also makes a huge difference in how your chicken grills, and eliminates that super fat part that contributes to uneven grilling and a bland end product.

Pepperoni Pizza Panko Chicken

Pepperoni Pizza Panko Chicken. Say that a few times really fast! This is an easy, kid friendly recipe that screams weeknight meal to me! It combines panko and parmesan crusted chicken, pizza sauce,  Applegate Pepperoni, and melty mozzarella cheese to make a delicious main dish.


Truth…I am not a huge pepperoni person, and never have been. Growing up I was just an extra cheese kind of girl. I have ventured out a bit since those days, but my ideal slice of pizza is still extra cheese. Cheese = Life.

My children, on the other hand, love pepperoni. They have been known to completely abandon a slice of pizza after eating just the pepperoni off of the top.

WHO. DOES. THAT.

Despite not being a super duper pepperoni lover, I saw this Applegate Naturals pepperoni at the grocery store and thought it looked brilliant. It was huge. It was massive. It deserved to sit atop a chicken breast with melty mozzerella cheese and fresh basil on top. I needed this pepperoni in my life to show my children that I, in fact, can be a pepperoni person too.

Here is my husband pretending to be tall, dark, handsome, and mysterious while showing off this wonderful Applegate Naturals Pepperoni! He attempted to give me several pointers on how to get this shot. I didn’t listen to any of them!

Ingredients and Tips

I have been mentioning this a lot here lately, and here I go again. Target is really killing it with their organic, non-GMO, and better ingredient oriented grocery selection lately! I am so impressed with their organic selection, sometimes I forget I’m even at Target. As I browsed the isles, or ran through them with a screaming baby, I picked up a jar of their Simply Balanced organic pizza sauce for $1.29!

$1.29!!!! I thought it was a steal. 🙂

I also used  Kikkoman panko bread crumbs, grated parmesan cheese, shredded mozzarella cheese, and thin cut chicken breasts. If your chicken breasts are thicker, I highly suggest filleting them first (cutting them in half length-wise), and pounding them thin with a meat tenderizer.

When I sauté chicken, temperature and enough olive oil is key to getting those perfectly crisp panko crumbs on the outside. I had my burner on a steady medium-low the whole time. I knew I did not want to crank it up too high, as to not burn the olive oil or the panko bread crumbs. I think the crucial part to getting perfectly crisp and browned breadcrumbs is 100% the amount of oil in your pan. So before you put each piece of chicken in your skillet, make sure there is a generous dash of oil waiting for those breadcrumbs!

Homestyle London Broil

I used to get all kinds of annoyed when my husband would bring home a piece of meat from the grocery store labeled “London Broil.”

What. Do. I. Do. With. This. Thing. I went to pastry arts school, remember?


So I took a few different approaches as any aspiring chef wife would. I think it went something like marinating, grilling, ovening.  Marinating it to death for 24 hours just praying this thing doesn’t die on me. Praying a second time that my husband stops buying these things because.. why!?!?! Just get a cut of meat I know what to do with already! Are there not a dozen other choices there?

Then, after the first epic fail, the unthinkable happens. My husband comes home with not one, but two London Broils. In my head I’m thinking, didn’t we realize we don’t like these things the first time? This time I thought maybe I would just put it in a crock pot and see what happens. What could really go wrong in a crock pot? Could it die again in there? Could I burn the house down? Will he stop this nonsense already and just bring home a chicken breast next time?

The moment of truth came at a friends house, because I had a photo shoot in the morning and was running so low on time that I threw the two London Broils in a crock pot with roast seasoning and carrots and hoped for the best. We showed up and I warned everyone I had no idea what was going to happen when I took the lid off of this thing. Everyone assured me that it would be fine, they would love me even if this was harder then a brick. My husband sliced a piece and to my surprise it was good!

Most recently, I got really brave and actually purchased one BY MYSELF at the grocery store. Literally I went to Giant and went directly to the meat section without passing go and picked myself up a brand new and shiny London Broil that I was going to go home and turn into a delicious dinner.

Seriously, who am I anymore!?!?!

When I Figured Out This Whole London Broil Thing

What I realized was that a London Broil was very similar to the cuts of meat they label as roasts or rump roasts. I noticed them to be a bit leaner, with a lot less marbling throughout and less fat on the outside as well. What I also noticed was that they are priced HALF THE PRICE of the roast cuts. Maybe my husband was on to something here?!?! They are almost always on sale. The London Broil I purchased was $7.00 and it was almost 3 lbs of meat. So winning when you have 4 kids!

I used my dutch oven that regularly collects dust inside my cabinet to make my Homestyle London Broil because I have a wonderful double burner on my gigantic stove so I figured, why not? It turned out to be the perfect way to cook my Homestyle London Broil because I was able to start it on the stove, browning both sides as well as my onions. Then slow cook it in the oven for a few hours, and to finish pop it right back on my double burner to make a delicious gravy out of the broth. I need to use this method more often because it was super easy!

Recipe Tips

I always say this when preparing meats but if you don’t have any course kosher salt in your life you need to get you some! It can take a just fine meal and make it so much better! I generously seasoned my London Broil with a mix of course kosher salt, cracked black pepper, onion salt, and granulated garlic. It is THAT EASY. Generously is the key word, do not be afraid to semi-coat your meat in the spices, just make sure you don’t over-do the onion salt due to the fact that you are using course kosher salt and beef stock as well.

All of those little bits and pieces and lovely brown color you get when cooking your onions is what I call flavor building. You can’t flavor build like this in a crock pot, that is why I didn’t just throw my ingredients in one. I would say you could totally use this recipe in a crock pot but the best way to do it would be exactly how the recipe says.

I just used a fork to pull apart my meat and it fell apart so easily. When making the gravy, I did not remove the meat. The stirring around helped pull apart the meat as well.

I did season to taste after everything was finished with just a pinch more salt and pepper. As with any recipe, if you feel it may be a tad bland, season to your own taste!

Grilled Greek Chicken

Confession: It took me approximately 22 years to try feta cheese. As a matter of fact, I don’t remember my parents ever purchasing feta cheese, and I never even heard of it until the first time I tried it. Living under a big ol’ food rock, no?


The first time I tried it, I actually just tried a hunk of it plain. Like why?!?! Why didn’t I understand it needed to be paired with other delicious foods of either the salty or sweet caliber to live up to it’s full feta potential? Not a great first impression but thankfully it wasn’t my last.

Fast forward a bit, I started working at a Greek restaurant and quickly realized I needed to give feta cheese another chance. I have not looked back since! This Grilled Greek Chicken is a fabulous recipe that pairs feta with other savory, salty food to bring out how awesome it is! You take the salty feta, the perfectly seasoned chicken, and the crisp tomato to tone it down a bit and you have the perfect bite!

Speaking of crisp tomatoes, this Grilled Greek Chicken is such a versatile recipe in terms of how you can mix it up and make it your own! The first day I made the chicken I ate it with a ton of tomatoes drizzled with olive oil, salt, and feta cheese. The weather here has been super warm here, so getting out and grilling and eating a light and refreshing side made me dream of the summer nights that are just around the corner. The next day I used the same chicken in a Greek salad. It was the perfect protein to throw onto a bed of greens, add a few croutons, tomatoes, and dressing and have a quick and easy lunch.

Meal preppers.. This is a great one for you!

Grilling The Chicken

I know this sounds so much like a cooking 101 class but the first step to this recipe is preparing the chicken the right way. I’ve given everyone this run down over and over again, however I know I get new traffic from Pinterest every single day. So hello new readers and listen up… preparing your chicken correctly is the key to every chicken recipe! 🙂

I’ve talked extensively about this on my Fiesta Grilled Chicken recipe but here I go again because I’m super passionate about helping people understand how to cook delicious food at home! If your chicken breasts are super thick, you will want to filet them (cut them lengthwise in half). Your knife skills do not have to be perfect to do this and rest assured, some of my chicken breasts look very butchered up when I do it too! Just keep practicing!

After you filet your breasts you will want to pound flat any super thick parts with a meat tenderizer. This ensures that every bite will be seasoned correctly and your chicken will grill evenly! There is nothing I hate more then biting into thick chicken that tastes bland. This will solve that problem! Simply place a piece of plastic over your chicken breast and pound. I like to this it is stress therapy and cooking all in one! haha

The next step. Course. Kosher. Salt. I’ve also talked about this ingredient extensively, but again, it is important so I’m saying it again. When seasoning meat I always use course kosher salt. You certainly don’t have to go overboard because it is strong and totally possible to over season but it can take a piece of chicken from zero to hero in just a pinch!

I have a $100 grill from Amazon.So by all means it is nothing fancy but it gets the job done. I put one side on medium, and one size on low. I start each piece on the hotter side, get nice grill marks by moving each piece after a few minutes, then I flip the chicken breast to the lower side to finish it.

Grilled Surf & Turf Tacos

Tacos are a family favorite here, and these Grilled Surf & Turf Tacos did not disappoint! They are so quick to put together, and a perfect meal for any night of the week.


One quick thing to point out about life in general. Target now has organic flour tortillas and that means my life is basically complete. For years (I’m not kidding) I’ve been looking for a store bought flour tortilla that did not contain hydrogenated oils, also known as trans fats. I was able to find ONE product at Giant that did not. ONE. They are good, but I like options!

Now there are two! So I can now go to Target, get a latte from Starbucks, buy diapers, groceries, and  tortillas all in one place. Yeeessss. 🙂

Not only did I find flour tortillas that checked out in the ingredient department, I also found a huge bin of Avocados From Mexico right next to the tortilla section. In the bin I found the perfectly ripened avocado. Not too mushy, not too firm, but right in between. It sliced so perfectly for these Grilled Surf & Turf Tacos. The best part… I wasn’t even there for tortillas or avocados!! haha In fact, I don’t even know what I was there for!

Only. At. Target.

In my Fiesta Grilled Chicken recipe I shared a spice mix that I use for grilled meats for tacos, burritos, quesadillas, etc. This recipe is exactly like that one, in that I just use a few spices and I’m done! No packets for seasoning, or out of the ordinary ingredients. I love these simple recipes and my family does too!

Speaking of packets… a friend was just over at my house the other day and mentioned that she has always wanted to make her own taco seasoning mix but she just didn’t know what to use. I got mine off of the back of a can of beans one day. I have honestly not picked up a packet since then. It is so simple! You can totally play around with ratios of course,and add in other ingredients as you taste test and figure out what you like the best. Per pound of ground beef I use:

  • 2 Tablespoons chili powder
  • 2 Tablespoons cumin
  • 2 teaspoons adobo seasoning
  • salt and pepper to taste

The adobo seasoning does contain sodium, so I do go light on the salt. This recipe is similar, I’m just using steak instead of ground beef. Those 3 spices are the best together and are a great foundation for making your own taco seasoning. I’m sure I’ll be posting a ton of other recipes using them since my kids love this stuff and so do I!

Fiesta Grilled Chicken

There are a few recipes I’ve made so many times my wonderful husband just flat out hates now. Shouldn’t he just be happy that he has a wife that is cooking for him? I think so, I really really do!


*Side note: Mac n cheese is the other recipe he could do without me ever making again. Honestly I’m wondering what is wrong with that man. HA! I’m on a quest to produce the perfect mac n cheese, so he better suck it up and continue to taste test!

It occurred to me the other day that my family totally over-did this recipe at the beginning of the summer. We had just purchased a grill (holla at that cheapo $100 grill from Amazon!!) and we were grilling EVERY-SINGLE-DAY. Now, you have to realize, there is a very good reason for us to be over grilling. At our previous residence we couldn’t have a grill. It killed me a little bit inside every time we drove by someone’s house that smelled like sweet delicious summer time grilling. I hated the place we were living at a little more every time I had to smell that smell knowing that the grill master in me needed an outlet.  I had in my mind that when we finally got a grill we had somehow “made it.” Yes, it was like my Benz. Only it was a grill, and I needed it in my life.

Now that that really emotional and sentimental news has been broadcast all over the internet I think we shall move on.

One thing about grilling chicken that is a MUST for me is making sure your chicken isn’t too thick in any spots. I never grill chicken without pounding it first because there is nothing I hate more then when grilled chicken has a really fat side that takes forever and a day to cook through. If you have ever been at a restaurant and wondered why their grilled chicken that is seemingly so simple was 1,000 times better then your at home grilled chicken it is probably that their chicken was nice and even, with no super thick parts to take away from the yummy seasoning. My point: Flat chicken rocks!

The way I pound chicken (that may be obvious to some and totally new to others) is very simple:

  • Mise en place: Translation… Get everything out before you start because once you have raw chicken on your hands you don’t want to have to go back to get your stuff out!
  • Things you will need: Meat tenderizer aka keep my hubby in line hammer (totally just kidding don’t send me hate mail), cutting board, piece of plastic wrap or press n seal, chef knife, large bowl.
  • I always filet my chicken first by cutting it in half length wise. This isn’t rocket science and yes, sometimes I end up with a few pieces that are extra thin and that’s totally fine with me!
  • Place chicken on cutting board, put piece of plastic over chicken to ensure you don’t splatter everything you own with raw chicken bacteria.
  • Using the meat tenderizer lightly pound chicken as flat as desired. Don’t be shy, yet don’t go ape shit on it. Unless of course you are looking to get some aggression out. 🙂

Serving Suggestions

  • With flour tortillas (check those for trans fats! partially hydrogenated oil always seems to be lurking in these products) wrapped up with all the yummy toppings.
  • With grilled peppers and onions.
  • With a side of cilantro lime brown rice.
  • And of course with as much cheese on top as humanly possible. Oh and sour cream, because you can’t have one without the other!

Chicken, Bacon, and Broccoli Pasta

Chicken Bacon Broccoli Pasta


One. More. Week. Just one more week of summer vacation left. Have you seen the video of the mom singing “Bye, Bye, Bye” as the bus leaves on the first day of school? Yeah, that’s me right now. I’m ready to see that bus pull away (ok, we don’t have busses but if we did….) and I’m ready to get back to the “school year” schedule. Don’t get me wrong, I love my oldest son dearly. It is just that I’m 36 weeks pregnant, FAT as ever, out of energy, can’t bend over, and have exhausted all of our summer plans. But here I am making this Chicken Bacon Broccoli Pasta anyway!

I never thought I would be ready for summer to be over, but today when it hit me that next Tuesday is the first day of school I was kind of excited! Maybe it is because I really am just tired of adulting, or maybe it is because I have been telling myself over and over again that at the end of summer I will have a new baby. Which ever the case I’m just not so sad to see summer go this year.

Speaking of adulting, I did a little bit of it today and whipped up some brownies PLUS this delicious, cheesy, and somewhat indulgent pasta. Who doesn’t love a pasta dish like this one? Cheesy..check. Creamy..check. Bacony..check. Carb-o-licious..check. Oh and then there is the broccoli that I threw in there to convince myself I was being healthy..check. 🙂 This dinner is a win-win in the ingredient department, but even better is that it takes less than 30 minutes from start to finish! With back to school schedules in full swing I know I will be needing meals like this to get me through the week (and keep my kids from complaining).

  • I used thin sliced chicken breasts for this recipe, as I always do. If you pick up regular chicken breasts at the grocery store, you can easily slice them in half lengthwise before slicing into strips, or use a meat tenderizer to flatten them a bit before slicing into strips. There is something really gross about biting into a super thick and chunky piece of meat so I always recommend thinner pieces.
  • I only cook the broccoli for a minute or two when I first put it in because it will continue cooking. When your broccoli brightens up in color you are good to add the rest of your ingredients.
  • Additional salt and pepper to taste can make or break a recipe. The cheese in this recipe is pretty salty, so you probably won’t need to add too much additional seasoning if you do.
  • When cooking your bacon you may notice some residue on the bottom of your pot. THIS IS GOOD. When you stir in your milk go ahead and scrape that residue off the bottom of your pan for extra flavor.
  • As always when cooking I keep my burner at a medium temperature. Often times I feel like people want to crank up the heat but this can easily ruin a recipe. A steady low-medium is where I do most of my cooking!
  • Recipe Update: I have made this recipe a couple times and have found that I like cooking the bacon separate from the rest for a crispier result. I just throw my bacon in the oven. When it is cooked I diced it up and mixed it in at the end.

Black Bean and Corn Fritters

Can I just go right ahead and admit today was just one of those days. If you have kids then I know you know what I’m talking about! Having my 8 year old son home for summer vacation and being super preggo is a lot more then I bargained for. Hello… when you can’t see your feet how are you supposed to bend over and pick random things up?? Or bend over and give the babes a bath?? Or put your own shoes on??  The big belly struggle is real! #pregnancyproblems


However…. somehow I managed to throw these super fun and delicious Black Bean and Corn Fritters together and the kids gobbled them up for lunch. I wish I could say that I served them with a green veggie or fruit salad but no, the kids are on a hard boiled egg kick so protein + protein it was. Hey, nothing wrong with that…. until tomorrow morning when I have to smell the aftermath of this bean + hard boiled egg meal. Thankfully my husband wasn’t here!

In other news my husband wants me to stop purchasing kitchen stuff. How do I put this…nevergonnahappenhubby.

In other, other news Donald Trump is running for president. Am I missing something here? Is he a politician now? Is he just going to pay someone off to make important decisions? Am I the only one super confused about this? And by the way, if you haven’t seen his Toupee memes I suggest you Google that immediately and have a good laugh!

AAAANNNNDDD…. Back to the fritters because they are super easy to make and come together in about 30 minutes from start to finish. 30 minutes!! They are so easy I would say this would be a great recipe to let the kids help out with. I served mine with a nice dollop of sour cream and a little extra cheese on top and they were just perfect. Hope you all enjoy as much I we did!

This Creamy Italian Dressing recipe is one of my all time favorite recipes I have ever published on this blog! I even come to my own blog to look up the recipe for this dressing frequently. I guess I should write it down somewhere, but coming here is just as easy.

It is April 19, 2020 and I just so happen to be updating some older recipe posts that I have been popular. The original recipe was posted on April 23, 2015. How could this have been 5 years ago?

I didn’t quite like the writing style so I decided to re-do the whole thing. Over the last 5 years I have made this recipe dozens and dozens of times. It is perfect for everything from a good old salad dressing, to a pasta salad dressing, and even great for grilling. There isn’t much I haven’t done with this recipe in the last 5 years!

Creamy Italian Dressing Tips and Tricks

  • One thing that I realized over the last 5 years is that not all Creamy Italian Dressings are created equal. In fact, you can use the same recipe and yield different results depending on what you are using to mix the dressing. What I found was that my more expensive blender (Vitamix) did NOT yield the same result as my $20 mini food chopper from Ninja. I actually far prefer the mini food chopper for making all of my dressings. If you like making dressings at home, or are looking to cut out processed ingredients in store bought dressings, I think the $20 price tag for the mini Ninja is totally worth it! In fact, I would buy it just to make this recipe over and over again.

 

*Side note: I still totally love my Vitamix and nothing else I have made in it was a flop.

  • When it comes to homemade dressings I highly suggest looking for a very mild extra virgin olive oil. I have made dressings with very robust olive oils in the past and they can be overpowering. I look for oils that are specifically labeled mild.

Chicken Parmesan Alfredo: Two classic Italian dishes combined to create a simple dinner your whole family will enjoy! || www.3boysunprocessed.com

Have I told you lately how much I LOVE my cast iron skillet? Yes, it’s true. A few years ago I traded in my non-stick cookware for all stainless steel and cast iron. It did take me a while to get used to not burning stuff to the bottom of them like EVERYTIME but after adjusting my heat (much lower!) I realized I didn’t need those chemical laden pots and pans after all! 🙂


Today I’m sharing this chicken parmesan recipe that goes to a whole new level by adding a super yummy Alfredo sauce to the pasta and lots of mozzarella cheese before baking it in the oven to get that nice, crusty mozzarella we all love. The best part is I used my wonderful cast iron skillet to get a nice, crispy piece of chicken without a deep fryer or any unhealthy oils. If you don’t own a cast iron skillet no worries, you can do this in just about any sauté pan, however I do love the results I get from my cast iron. Just take a look and you’ll understand! Now that’s a piece of chicken to be proud of!

Another thing I love about his recipe is the versatility. If you are short on time and don’t feel like taking the extra steps to make the Alfredo sauce you can absolutely toss your pasta in extra red sauce and call it a day. Sometimes I go the red sauce route, sometimes I go the Alfredo route. Sometimes I even toss my pasta in extra red sauce AND ricotta cheese and that is delicious too. Either way you will end up with a dinner your family will love!

Whenever I use a convenience product like the panko bread crumbs I used in this recipe I always caution folks to READ INGREDIENTS!  These are the products most notorious for adding a bunch of crappy ingredients that don’t need to be there just for the sake of keeping the product on a shelf for years without it going bad. I get so frustrated with brands like Progresso who willingly put profit and production above ethics. When it comes down to it, there should be no reason any breadcrumb product contains ingredients like partially hydrogenated oils and high fructose corn syrup. When I started reading labels one of the first products I immediately threw away were the breadcrumbs that had been lingering in the back of my pantry forever. That alone should have indicated to me that something just wasn’t right with the product to begin with. Since that time I’ve experimented with making my own breadcrumbs (which works wonderful too!) but this time I opted for an organic panko product I’ve found in most mainstream grocery stores (check their organic section).

New Year, New You? Right? 🙂

Here we are… two weeks into the new year and I’m wondering who is still sticking to their “let’s get healthy” resolution? If you’ve fallen off the resolution train already, don’t worry! One calendar day means nothing, however a new attitude about food means everything! Forgetting about that mark on your calendar might be the best “should-have-been resolution” out there because every day is a new day to change how you eat. Every grocery store trip, every meal is a new chance to check ingredient lists and care about what you are putting into your body. Yes, there are times when I eat things that I know aren’t in the game plan, but I don’t dwell on it for too long because I have new meals coming up that can and will be healthy.

I have to start this with a story about my mom. She’s been on diet after diet after diet her whole life and I think she might be beginning to understand that she NEEDS to check ingredient lists for everything. It doesn’t matter if it says “light” or “natural” because chances are it probably isn’t. She was telling me all about her new eating plan, yet mentioned she was still using a bottled dressing. Now, don’t get me wrong, we are all going to fall short somewhere. If 95% of your diet consists of unprocessed foods, then you are doing really great! However, bottled dressings just make me want to throw something. They are so counterproductive it is just upsetting. Big pile of delicious veggies? Here, let’s pour some unhealthy GMO soybean oil and MSG on it! Unhealthy fats, gimmicky lies on the front of the bottles, addictive ingredients, tons of sodium, artificial colors, preservatives, I mean I could write a book about this crap.

At the end of the conversation I told my mom “Listen.. it is all about seasoning your food. Even if it is a salad it needs salt and pepper. Olive oil, vinegar, spices, salt, pepper. That’s all it takes to make your own dressing that you will love to eat. But the key ingredients are salt and pepper. Nobody wants to eat food that is bland, and this is the key to making your own dressing that actually tastes good. TRUTH! 🙂

Other then the obvious health benefits kale is an awesome green to use in make ahead salads because it doesn’t wilt. That’s right, you can dress this salad the night before and you will still have a crisp and fresh green to take for lunch or enjoy at home. Kale can be a little rougher then spinach/romaine so I’d suggest chopping you kale thinly.

Crispy Blackened Chicken and Broccoli Pasta

First, who else is watching The Voice right now? All of these guys are so amazing!

And second, a big Happy Birthday to my first born baby, who turns 8 today! I know, I know, shouldn’t I be posting a cupcake or something? Well, those babies were all finished up last night around…..11:30 PM. Every procrastinating parent has been there, right? Luckily my cupcake game is on point and his Teenage Mutant Ninja Turtle cupcakes made it to school without anything tragic happening! 🙂

So after I completely turned my kitchen upside down last night and left the mess to deal with this morning I didn’t really feel like putting something super special together for dinner. You know, when you’ve spent your entire morning with a bottle of bleach in your hands, cleaning up your kitchen and, oh yeah….the pee around the toilet (that whole boy thing is no joke), and you have little energy left for dinner? Sure, it happens to the best of us. And then we make some super easy and delicious Blackened Chicken and Broccoli Pasta and all is well! Not bragging or anything but my husband totally tasted this and said “Chik-fil-a doesn’t have anything on Mommy.” Score!

Ok so yeah, that’s a flax seed in that picture. It has nothing to do with this recipe. Opppps!

This is a two step recipe that involves just one pan. I’m going to quickly sum this up to make this real simple and easy (full recipe below):

1) Coat your chix (restaurant lingo for chicken) in seasoning, dip in breadcrumbs, BAM!

2) Into EVOO drenched and heated pan for some sizzlin’ action. POW!

3) Remove the chix when it is nice and crispy. Deglaze pan with some chicken stock to get all the goodies off the bottom. WOW!

4) Add some butter lovin’ and some flour, then liquids (stock, milk), pasta, and cheese, and simmer that goodness until pasta is about half-way cooked. Add broccoli, allow to cook, and DONE!

Is it just me, or was that really exciting? 🙂 What I love most about this is the ease of cooking the chicken. No annoying waste of an egg to coat your chicken, no 3 step flour, egg, seasoning mess, just an easy cut, coat, and cook method that delivers the crispiest pan “fried” chicken ever!

*For this recipe, I used a store-bought organic breadcrumb. Although these are not 100% whole wheat, they are a great convenience product that doesn’t include any unnecessary ingredients like hydrogenated oils, HFCS, MSG, etc.  Here’s a link if your interested!

Chicken Minestrone Soup

Can I just puuurrrty please dive head first into this pot on a cold, sleeting/freezing rain/snowy day and hibernate there until May? PLEASE?????? Ok, maybe that’s what I’ll be asking Santa for this year!


Confession: most of this soup never even made it to leftover land. It was supposed to, that was the plan. Tomorrow is my husband’s Holiday work party and the kids need a dinner. A big pot of soup is perfect, I said. It will last until the end of the week, I said. This is totally the last bite, I said. Then I lost all self control and kept coming back for more. Where did my self control go again?

Oh that’s right, my self control flew right out the window when I realized how delicious and nutritious this soup was. One more bite because it contains veggies, and then another because Hello! Whole Grains are good for you! And then just one more for the spinach! And the tomatoes! And the ground chicken is lean! And come on, one more because it looks pretty! Ok, heck just dump the whole pot in my mouth, please.

Then all of a sudden I’m all like…honey did you eat all the soup? 🙂

This soup all started when I was at Wegman’s today and saw the organic ground chicken on sale. I kept thinking back to a few years ago when I tried to use ground chicken for tacos and it was a complete disaster. We basically just threw a TON of cheese on top and gagged it down because it had a really odd texture and was just plain awful. I used to use ground turkey quite a bit, so I thought ground chicken would be similar but in truth it really isn’t the same at all.

Today was the first time since the taco debacle that I even considered purchasing ground chicken again and I’m so glad I did! Sometimes I get so sick of using the same meats over and over again, so I thought heck, why not give it another go. I’m a much, much better cook now and I was confident I could doctor it up to make something super yummy out of it. Immediately I thought SOUP, so I went with it. I was really surprised how awesome it turned out, so I just had to share for all those ground chicken doubters out there like myself.

So what made it different then the awful tacos? Well 1) I wasn’t using a seasoning packet that contains an array of random crap added because we just don’t get down with Ortega like that anymore! Then 2) There are so many other flavors going on, and everything kind of blends together to create an overall great taste. Basically what I’m saying is that I was totally wrong for all this time and I used to be a horrible cook! 🙂

*I usually use my own chicken stock, but in a pinch today I found this organic free range Pacific stock that does not contain any added MSG/Yeast Extract. If you don’ t have any homemade stock on hand, I highly recommend checking out this product.

Bacon and Mustard Asparagus

Bacon. Mustard. Asparagus. Hello, I’m so glad we’ve met! I’m so glad me and my *asparagus loving* one year old just devoured a whole bunch of asparagus together, covered in whole grain mustard and bacon. Ok, I’m the only one who ate the bacon, because salt-fest 5,000 isn’t exactly a good idea for a one year old. Over concerned Mommy? Possibly. Greedy bacon lover? Yes.

Ok, so I’m not teaching my kids to share bacon. Truth! But you should most definitely make this delicious asparagus to accompany your holiday party this year, and share with your family, because Hello! The table needs a bright and colorful veggie dish and the broccoli casserole just isn’t cutting it anymore. Ok, I’ve always hated broccoli casserole anyway so maybe I’m biased, but seriously this asparagus just screams delish!

I have an asparagus secret weapon that enables me to purchase the perfect, skinny asparagus every week for $2.99 a bundle, and the bundle is huge! On a past recipe a reader mentioned the cost of asparagus and I KNOW, it is super expensive compared to other veggies. If you are looking to save some green on your asparagus GO TO ALDI! GO TO ALDI! GO TO ALDI! I can’t say it enough. Go to Aldi! This time of year they have some awesome seasonal products and if you can find your way out of their junk food isle you might just find some awesome deals on real food. We shop there a lot because 3 kids and a husband that eats like a horse is expensive. We got our bacon at Aldi too, organic, for a fraction of the price of what I would pay at Giant or Wegman’s.

And now… I present to you… the most in-your-face asparagus picture ever. Guiness Book of World Records here I come!

Beautiful, right? Perfect bright colors for a holiday table, right? Yes and yes! Above all this asparagus is just amazingly delicious and I’m not just saying that because I made up the recipe. It might be the *Best Ever* asparagus recipe, but you know pulling out the *Best Ever* card isn’t really my style so let’s just leave it at this: This asparagus is awesome and could be, would be, the *Best Ever* if we used those words. The end!

I must also stress this recipe is SO EASY. Easy as in it takes less than 20 minutes to put together, and as little as 5 if you decide to omit the bacon. Healthy weeknight side dish right here. 🙂

And guess what? We picked a tree this weekend. Hello hunky husband! #Imarriedwell

Loaded Cheese Fries

Happy Black Friday! I hope everyone had a fantastic Thanksgiving. We had yet another great Thanksgiving with tons of food and time with family. My husband had to work today so no Black Friday shopping for me yet but I might venture out this evening. 🙂


And then…. these Loaded Cheese Fries happened! No mystery Kraft Cheeze Whiz, no bagged fries with tots of extra ingredients including GMO’s, just real ingredients put together to create a real food version of an all time favorite. Say something Kraft, I dare you! And please, if a word contains a Z instead of an S, that might be an indication you have a processed food disaster on your hands!

I must admit, I grew up eating Cheeze Whiz, because again my parents just didn’t understand. Almost every single day I would come home from school and eat a microwaved soft pretzel with Cheeze Whiz (cringe!). I always had to spoon the cold Whiz onto my plate without even looking at it because it actually disgusted me that bad.

So what is Cheeze Whiz anywho? Basically a mix of dairy, canola oil, modified food starch, and preservatives. You know, some processed concoction only Kraft would be able to come up with. What do you really expect from the company who created Cool Whip? I surely don’t expect anything real from them so I made my own cheese sauce that is super easy, uses only 4 ingredients + seasoning and viola! Cheese fries with a real cheese sauce that taste 1,000 times better then that canned crap!

Now that we’ve called out Kraft, let’s talk bacon! We always try to purchase bacon that contain natural nitrates. I know some people don’t think it matter either way, so do what works for you. FYI our natural bacon comes from Aldi, and is a bit cheaper then most mainstream grocery stores. 🙂 Love me some Aldi!

Last but not least, these Loaded Cheese Fries are perfect for tailgating, football parties, Holidays, or any other gathering you can possibly think of. I don’t think I’ve ever met a person who doesn’t love fries so these are the perfect crowd pleaser!

Whole Wheat Kale and Prosciutto White Pizza + #52NewFoods GIVEAWAY!

Remember that time you got that genius idea to make homemade pizza with whole wheat flour and it was a total flop? Been there, done that! There has always been something I really hated about how the crust turned out, because truth be told shaping a pizza is really hard!


I was looking for recipes on Martha Stewart’s website and there it was..one of the most genius food hacks I have ever seen! A pizza in a cast iron skillet! Where has this idea been my whole life? I know, I know, Pizza Hut has essentially been doing this forever and calling it panned pizza but it never occurred to me that maybe this would be the tool I needed to fix my homemade pizza problems.

I decided to incorporated kale into our grocery list this week, because it isn’t something I pick up very often. This week was different though, because Jennifer Tyler Lee’s new book, The 52 New Foods Challenge, made me realize I have been ignoring a few vegetables that I’d like to start using regularly. You know, when you get into a grocery shopping routine and forget about all the other stuff the grocery store has? Yeah, that has been me lately and I wanted to challenge my family to trying something new!

What better a way to introduce kale to my children then pizza? I can’t remember a time my kids refused pizza and the dough is an awesome way to get the kids involved and having fun. I kid you not, my toddler had a piece of dough that he played with for hours. Who needs toys when you have pizza dough? 🙂

If you haven’t checked out my Sweet-Fire Chilli post, Jennifer’s book is based upon challenging your family to try just one new food a week. This is a genius way to handle transitioning to cooking from scratch and eating healthier because we all know how busy life with kids can get. Jennifer suggests dedicating at least one day a week to cooking with the whole family and trying something new. Not just that, she has made it into a game for kids to play to entice them to actually eat the new food! Again, where has this idea been my whole life?

Sometimes it is important to step back and take a look at the big picture. With Jennifer’s book, the big picture of eating healthier, getting your kids to try healthy foods, and cutting processed foods seems so much more attainable for families who aren’t sure where to start. Can you imagine though, a year from now having 52 new healthy ingredients to cook for your family with? How amazing is that big picture?

I know this question is coming, so I’m going to go ahead an answer it! Is prosciutto processed?

No. Prosciutto is cured, which means it was heavily salted to draw moisture out of the ham and make it safe for consumption. Although this is a process, the prosciutto I used only had 2 ingredients that were ham and salt. Some companies will use nitrates as well, but shop around and find a brand that doesn’t. Since the prosciutto is cured, it is very high in sodium, so I wouldn’t suggest using it as anything other then a heavy garnish in a dish like this. Just a few shreds will give you flavor enough to bring a really great taste without adding gobs of sodium.

If you are intimidated by mixing the pizza dough and using yeast, do not be! It is honestly easier then making cookies, I promise. 🙂 The dough only takes about 8 minutes to mix up, then rests in the refrigerator for at least 1 hour, although you can refrigerate it for up to 24. I highly suggest using whole wheat white flour which is  a softer wheat, therefore yields a softer and less dense product. Whole wheat white flour can be confusing because it sounds like it is similar to bleached, enriched, white flour but it IS NOT.

One Pot Veggie Mac N Cheese

For real though, who doesn’t love some mac n cheese? It’s like an American diet staple. Please let’s remember the best mac n cheese DOES NOT… I repeat… DOES NOT come out of a box! Kraft Annies Velveeta. Even the “better” organic boxed mac n cheese still has a nice little packet of cheese powder stuff right inside the cute little bunny box. Now please, someone… anyone… what IS that stuff?


How, just how I ask… do you get cheese powder like that? Don’t know, don’t care! *finger snap* because anyone who has a stove can make their own mac n cheese with just a few ingredients PLUS veggies. Incase you think you are not included in that “anyone” even my mom can make homemade mac n cheese, and let’s just say she’s not kitchen savy.

Ok, now that I verbally abused the Annie’s bunny I’m just going to keep explaining how amazing one pot meals are that take LESS THAN 30 minutes to make. This reminds me so much of my Unprocessed Hamburger Helper recipe, in that it is made the same way. Instead of ground beef, I sautéed those lil baby bellas with a clove o’ garlic, and then I added the other goodies, put a lid on that baby, and let a little heat work it’s magic. Now, let’s not just walk away from our stove like those baby bellas don’t need supervision because they do. This pot needs stirred a little more then the Unprocessed Hamburger Helper but it is still very low maintenance and easy.

If you are looking for a little more oommmph in your pot, go ahead and throw in some shredded chicken. A little protein goes a long way, so chicken could bump this meal up on the “I’m full scale” if you need it. 😉

Blanched Green Bean Salad

Once upon a time I went to the Farmer’s Market and came home with a grocery bag FILLED with green and wax beans. I came home, washed those babies, blanched those babies, and made a delicious vinaigrette to toss them in to make them super happy. I thought that was enough, but no, the beans wanted more. They were already perfect but they insisted they were just too beautiful to leave with ONLY a vinaigrette. I just wanted to make the beans happy, so I gave them some feta cheese and raisins and they were elated. The beans lived happily ever after for only a few minutes until they were gobbled up by the evil witch.


Ok that was true until the evil witch part because we all know I’m no witch! 😉 And well, beans don’t talk so I guess the rest isn’t true either. Ok, I totally made the whole thing up but hey, it sounded like a good story, right? Of course it was a good story, because we all love a cute fairy tale! Maybe I should have come up with something clever about Jack and the Bean Stalk but that seemed way to obvious and these beans are far too tasty for a giant who merely stuffs food in his mouth and swallows without even chewing. At least I think that’s how giants eat but who knows, I’m only 5 feet tall so clearly I know nothing about them.

Now that we have all of that fairy tale crap I just made up out of the way let’s just talk about how delicious blanched green beans are. When I was younger I thought I hated green beans because the only green beans I had ever seen were canned. I have vivid memories of seeing ugly canned green beans being served in the school cafeteria, and thinking who would eat those? YUCK! Canned green beans are all puffy and water logged and well… I hate them. I prefer my veggies on the crunchier side so generally if I’m making green beans I blanch them. Blanching is just a fancy word for submerging into boiling water for just a few minutes, then quickly submerging into cold water to stop the cooking process. No soggy beans here!

Please excuse the vinaigrette dripping off the side of my bowl. You see, I thought it would be a good idea to pick green beans out and eat them while I was taking pictures. Obviously it wasn’t. Photography fail! Just an FYI, yes this is a cold salad. The feta and raisins are optional but I highly recommend them!

Mediterranean Orzo and White Bean Salad

Truth be told, I learned something about myself today. I don’t know how to spell the word Mediterranean. I tried many times. Is it two d’s? Two t’s? Heck I have no clue, I still don’t think I could spell it right if I wanted to! I’m not even convinced Google knows how to spell it.  Thank you auto-correct! Regardless, that doesn’t take away from how much I love this pasta salad! *Insert blogger sales pitch about how amazing this pasta salad is* The orzo, the feta, the veggies, the beans, the salty sweetness, I mean really it is just a party in a bowl all around. I searched high and low for whole wheat orzo because I wrongly assumed it was a thing. Why wouldn’t every grocery store carry it? We are living in 2014, you know… the future, where people have woken up to the fact that the bleaching and enriching process is poo-poo! Thankfully, my search ended at Wegman’s where I ran into a box of whole wheat orzo and the rest is history.


I have been making pasta salads all summer because they are quick, easy, and able to pack protein and veggies. I love putting pasta salads over spinach or greens and eating it for lunch (no dressing required). My lunch is usually just shoving some food in my face because I’m too busy feeding hungry boys to even think about what I am eating. Even though I’m home with them I can relate to the people at day jobs who feel too busy to eat and a lunch like this is a great solution. You don’t have to fiddle around with those stupid plastic dressing containers, or a bunch of baggies. Throw some spinach and pasta salad in a container and you have a meal in a bowl. One bowl, one spoon/fork and there you have it!

The dressing for this salad is a mix of a few bold flavors, which is what makes is so good! Whole grain mustard, tomato paste, and red wine vinegar come together to create the perfect companion for olives and feta. My husband’s grandparents hooked us up with some yellow tomatoes and they were super sweet and complimented the saltiness of this salad perfectly. If you can’t find a sweeter tomato, I would suggest adding a few extra sun dried tomatoes, or even a handful of dried cranberries to give the salad a nice balance.

I struggled with what to call this flavor bomb, but I think Mediterranean White Bean and Orzo Salad about sums it up, right? Sheesh I really need to start getting more creative but it seemed better then “The Best EVER Pasta Salad Recipe!” agreed? 😉

Tex-Mex Potato Wedges

I’m just going to throw this out there…. these Tex-Mex Potato Wedges are epic. So epic I’ve included a ridiculous amount of food porn! They are over the top delicious and possibly one of my all time favorite food creations. These potatoes do take a little bit more time to put together then your average baked potato wedge recipe but they are soooooo worth it in the end!


Here are the steps to making these amazingly cheesy and delicious wedges:

I’ve said this before and I will say it again… the key to the perfect oven baked potato wedges is boiling your potatoes before you bake them. This ensures you are going to get a really nice fluffy inside with a super crispy outside. Essentially that is what the perfect wedge is to me! The other important part of this recipe is seasoning the potatoes correctly. I’ve included the spices that I used, which are pretty standard tex-mex spices.

My secret weapon when it comes to the perfect looking potato wedges is paprika. You want color on your potatoes and paprika is going to do that for you.  Although this recipe already has chili powder in it, I still sprinkled extra paprika on the potatoes just to bump up the food porn appeal! One last thing to note about the spices… measure your cumin people! Too much cumin will ruin these potatoes so I wouldn’t recommend going over 1/4 tsp.

As for the toppings, the sky is the limit! I topped mine with sour cream (which I consider essential), avocado, and fresh tomatoes. Of course we needed to throw in some fresh produce to combat all of the cheese!

Old World Spaghetti and Meat Sauce

This Old World Spaghetti and Meat Sauce recipe is truly a classic! It combines the best of both worlds, an oil based pasta sauce and a tomato based pasta sauce. This is also a really quick and easy way to make a homemade sauce, without spending hours letting it simmer and cooking down a bunch of vegetables. This is a great “beginner” homemade sauce, so if you haven’t made your own sauce in the past, don’t worry… you’ve got this!

The really unique thing about this sauce is it is actually made in a food processor instead of on the stove. Of course the meat portion of this sauce is cooked on the stove but the sauce itself is just a whole lot of flavor blended together and combined with the cooked beef and onions. After you combine the meat and sauce, just toss in pasta and top with fresh asiago cheese (or parmesan) and that is it! It doesn’t stop there people… this pasta is also amazing cold! I was actually inspired to create this after I created a cold pasta salad using the same flavor combination a few weeks ago. Not only is this a great dinner, you can throw it in your lunch the next day and you have an amazing pasta that would be great over a bed of spinach or by itself.

Ceasar Encrusted Salmon with Lemon and Goat Cheese Asparagus

We were out for the day and dinner time was approaching. How easy it would be to just stop for something, we thought. Something in the back of my mind just kept saying NO, don’t do it, you know that food is junk. I remembered that we had frozen salmon at home, which is really easy to unfreeze and throw in the oven. We also had asparagus and sweet potatoes to make with the fish so I knew I had a complete meal that could be made at home. When I finally got to sit down and eat, I was so happy I chose the unprocessed route.

For the salmon, I prepared an olive oil based Ceasar dressing to coat the salmon with before putting the breadcrumbs on top. The dressing is really simple, and contains just a few real ingredients… olive oil, lemon juice, anchovy paste, Dijon mustard, and salt and pepper. If you just read the words anchovy paste and thought “Forget about this recipe!”  let me ease your mind. All Ceasar dressings get their distinct flavor from either anchovies or anchovy paste. I have been making real Ceasar dressings for quite a few years in restaurants and I got over the whole anchovy thing a long time ago. If you are worried about the ingredient, step outside the box just a little and give it a try. I promise once you taste the salmon you’ll be thanking me! The real base of flavor from Ceasar dressing comes from the anchovy paste, so it isn’t an ingredient you can omit.

I don’t use store-bought breadcrumbs because they are actually one of the WORST products found in grocery stores. Who knew those seemingly simple breadcrumbs actually contain about 50 ingredients including trans fats (partially hydrogenated oils), and high fructose corn syrup? To make your own you simply place two pieces of bread in the oven while it is preheating and let them get a bit toasty (or you could use a toaster and toast them lightly). You don’t want your bread to get overly toasted, just a bit dry. Take them out of the oven, put them in a blender or food processor for a minute and that’s it! Once they are processed you season them and add a bit of olive oil to get a nice and crispy topping for your salmon. I promise once you do this, you will never be tempted to buy the store bought garbage again! Just an FYI, I use a whole grain, 100% natural bread from Food for Life. It is a sprouted grain bread that will knock your socks off because it doesn’t contain soybean oil, sugars, additives, or preservatives. Every single ingredient is identifiable and necessary. Please check them out in the frozen section of the organic isles in your grocery store!

With the salmon I served this lemon and goat cheese asparagus. It is another really simple side to put together quickly that is nutritious and delicious. It is really as simple as steaming/boiling the asparagus, seasoning it, and adding the cheese. I love my asparagus with big chunks of freshly cracked black pepper as well!

Lemon and Goat Cheese Asparagus

Ingredients:

  • About 25 asparagus spears
  • 1/2 tsp lemon juice
  • 1/2 tsp white wine
  • 1/2 tsp olive oil
  • sprinkle of salt
  • sprinkle of pepper
  • sprinkle of garlic powder
  • 1-2 ounces goat cheese

Directions: Steam/boil  asparagus. Put asparagus, lemon juice, olive oil, and white wine in a small sauté pan and allow wine to cook off (give it some heat).  Add seasonings, remove from heat and crumble goat cheese on top to serve.
